Recipe Variations

  • Veggies – We love the classic combination of broccoli and cauliflower, obviously. But feel free to swap out one or use less of both, and add other vegetables you like. Try this recipe with halved Brussels sprouts, 1-inch pieces of carrots or parsnips, or any hearty veggie!
  • Spices – Mix and match the seasonings to complement your meal! Roasted cauliflower and broccoli is a delicious combination with Italian Seasoning, or Indian garam masala, or curry powder. Or try with rosemary, thyme, simply garlic powder and onion powder, plus a pinch of salt and black pepper. And a bit of red pepper flakes or cayenne pepper is great to add a bit of heat!
  • Lemon – Finish the roasted vegetables with a squirt of fresh lemon juice and some lemon zest for extra zesty flavor.
  • Vegan – You can omit the Parmesan cheese to make this recipe completely plant-based and dairy-free.
  • Servings – As-is, this roasted veggies recipe makes 6-8 servings. Easily halve the amount of broccoli and cauliflower as a side dish for 3 or 4 people.
