How to Make the Best Cloud Bread Recipe
Preheat the oven to 300 degrees F. If you have a convection oven, set it on convect. Line two large baking sheets with parchment paper.
Separate the egg whites and egg yolks. Place the whites in a stand mixer with a whip attachment, or a large bowl with a hand mixer. Add the cream of tartar and whisk on high until the froth turns into stiff peaks. Move to a separate bowl.

Place the cream cheese in an empty stand mixer bowl. Beat on high to soften. Then add the egg yolks one at a time to incorporate. Scrape the bowl and beat until the mixture is completely smooth. Then beat in the Italian seasoning, salt, and garlic powder.
Gently fold the firm meringue into the yolk mixture. Try to deflate the meringue as little as possible, so the mixture is still firm and foamy. Spoon 1/4 cup portions of the foam onto the prepared baking sheets and spread into even 4-inch circles, 3/4 inch high. Make sure to leave space around each circle.

One of the greatest KETO breads I have found. Substitutions of flavorings makes it adaptable for many used. I even use it as a Blueberry muffin. Ham and cheese, chocolate chip, etc.

We made them for the first time. We used garlic parmesan seasoning…tastes like fluffy garlic biscuits.
I don’t have cream of tarter. Can I use something else
I only have a hand mixer and couldn’t get the egg whites and cream of tartar to go anything. Is there a trick to using a hand mixer to get the peaks?

You should still be able to whip the egg whites with an electric hand mixer. Make sure to use COLD egg whites and high speed.
I haven’t attempted to make this yet but have made the code red rebel pancakes which are very similar. IVE done some reading and ive seen where lemon juice or white vinegar can be used instead of cream of tartar when cooking. Is this true with this recipe as well?

Cream of tartar is an acidic compound and lemon juice or vinegar are acidic… So there’s a chance it will work. However, I haven’t tried that method so I can’t say for sure. I would be a little hesitant to add more moisture of any kind.

What temperature for a fan oven?

Are you asking about convection heating? If so, most ovens nowadays convert the conventional temperature for you, so stick with 300. If your oven doesn’t, you can take the temperature down to 275 degrees F.
