Then I straighten my halo and take a recipe the other direction. Enter these crispy on the outside and fluffy on this inside Spelt Waffles.

And surprisingly, they are my family’s favorite waffles. They do not miss the white-processed flour. They do not miss the handful of white sugar, and they do not miss the additional 1/4 cup of oil that I took out.

The US to metric converter got the amount of fizzy water to add completely wrong, so I added roughly double what it should have been! Luckily I had just about enough of everything to top it up to make double amounts so it was OK. The recipe was still a bit too liquid for the waffle iron but they did taste good. Would make again, after we’ve got through the mountain of them in the freezer!
