Breakfast Just Got Better With These Spelt Waffles
Sometimes I can’t resist a naughty breakfast like brownie belgiam waffles, or caramel apple cinnamon rolls.
Then I straighten my halo and take a recipe the other direction. Enter these crispy on the outside and fluffy on this inside Spelt Waffles.

Sommer’s Recipe Notes
These spelt flour waffles are light, airy and delicious.
And surprisingly, they are my family’s favorite waffles. They do not miss the white-processed flour. They do not miss the handful of white sugar, and they do not miss the additional 1/4 cup of oil that I took out.
Why You’ll Love These Spelt Waffles
- Nutty flavors – These homemade waffles are naturally sweet and have a slightly nutty flavor thanks to the spelt flour.
- Wholesome – Made with simple and wholesome ingredients, this version of waffles is slightly better for you.
- Customizable – From nuts and berries to chocolate chips, go wild with your favorite add-ins!
So you can eat your crispy spelt waffles on Saturday morning, without a single ounce of guilt, and still have dessert Saturday night!
Sounds like a winner to me.

Ingredients and Tips
- Spelt flour – To get that nutty, rustic texture, use your favorite brand of spelt flour.
- Baking powder – This will help the waffles get nice and fluffy.
- Eggs – Use large eggs at room temperature.
- Milk – Use dairy or your preferred plant-based milk alternative.
- Seltzer water – The carbonation from the seltzer gives these waffles that light and airy texture.
- Almond oil – Use a good quality almond oil to enhance the nutty flavors.
- Keep your waffles warm while making them by heating the oven to 200 degrees Fahrenheit and placing the cooked waffles on a baking sheet lined with a wire rack. That way they will all stay warm until you are ready to serve them!
- Make sure to preheat the waffle iron and spray with nonstick spray!
Recipe Variations and Dietary Swaps
- Nuts – Add chopped pecans or walnuts for an added crunch.
- Berries – Fold blueberries, strawberries or raspberries into the batter.
- Chocolate chips – Mix in your favorite type of chocolate chip before cooking the batter.
- Spices – Sprinkle a dash of cinnamon for a cozier flavor.
- Nut-free – Swap the almond oil with melted coconut oil or avocado oil.
- Vegan – Use a plant-based milk and swap the eggs with “flax-eggs” (1 tbsp ground flax + 3 tbsp water per egg).

Yum, Sommer! I love whole grain spelt flour. I think a lot of people are starting to take to it too, since the gluten in it is more easily digested. Plus, who wouldn’t want to eat some waffles that look this good?! Oh, and your photos look really wonderful lately…love that!
