Sommer’s Recipe Notes

We are firm believers that every meal ought to have some sort of vegetable on the table. And carrot dishes of all varieties are a great go-to veggie… They are available throughout the year, tend to please all tastebuds, are gentle on your wallet, and are SO easy to cook any number of ways! (Like turned into a souffle or simmered on the stovetop.) Yet honey roasted carrots are a particular favorite…

Today’s recipe features a simple glaze that roasts in the bottom of the pan with only baby carrots, honey, butter, water, ground ginger, salt, and pepper. By the time the carrots are soft and tender, the ingredients have reduced into a thick, sticky-sweet glaze!

Why You’ll Love These Honey Glazed Carrots

  • Quick and Easy – There’s no peeling or chopping, and no need to cook the glaze separately on the stovetop. Just throw everything on a sheet pan and let the carrots roast in the oven!
  • Customizable Flavors – We like the combination of ingredients that includes a touch of ginger for an itty-bitty note of heat. However, feel free to add in all sorts of herbs or spices to suit your tastes!
  • Versatile Side Dish – These tender, sweet, and oh-so tasty carrots are a delightful veggie that pairs well with all kinds of savory mains.

Prep and roast up a batch of carrots in under 30 minutes for a side dish that everyone is sure to love – yes, even the kids!

Ingredients and Tips

  • Carrots – We’re using baby carrots here for ease. However, if you prefer to use full-size fresh carrots, simply peel and chop them into uniform 1-inch sections.
  • Honey – Use a flowing honey (versus firm raw honey) to drizzle over the carrots.
  • Butter – Unsalted butter is best, as it allows you to have total control over the flavors.
  • Spices – This beautifully simple honey-glazed carrots recipe includes ground ginger, salt, and pepper
  • Possible Add-ins – Enhance the flavors and customize the dish by adding fresh minced garlic, lemon zest, or chopped fresh parsley. Or change things up by swapping out ginger or by adding more spices like ground cinnamon, cumin, or cayenne pepper for some spiciness.

Recipe Variations

  • Vegan – Use your favorite plant-based butter and swap honey with maple syrup to make this a totally plant-based side dish!
  • Spicy – In addition to cayenne pepper, as noted above, you can use hot honey for an extra kick of heat. And if you just can’t get enough spice, consider sprinkling some crushed red pepper on top before serving.
  • Veggies – You can also use this honey butter glaze and cooking method to roast diced sweet potatoes or butternut squash!

How to Make Honey Glazed Roasted Carrots

Tip for Success – You need a baking sheet with a rimmed lip to roast the carrots in water, honey, butter, and seasonings. The water is important because it allows the glaze to come together and thicken without burning on the bottom of the pan!

Storage Notes

  • Storing Leftovers – Transfer the cooled roasted baby carrots to an airtight container and keep in the fridge for up to 4 days.
  • Reheating – Gently reheat the glazed veggies in the microwave at 50% power in short bursts. You can also reheat them in the oven by roasting on a baking sheet for 10 minutes at 400 degrees. Just be sure to not overdo it… No one wants mushy carrots here!

Serving Suggestions

Protein Tip – These roasted baby carrots are great to add some vitamins and minerals to the plate alongside hearty animal or vegetarian proteins!

While the carrots cook in the oven, this is a perfect opportunity to bring out that handy air fryer. Use it to make a crispy and moist Whole Chicken with Herbs, tender Pork Tenderloin (of course), family-favorite Meatloaf, or flaky Air Fryer Salmon.

These sweet roasted veggies are also terrific to balance out savory fried foods, like Tavern Style Fried Chicken, Crispy Broasted Chicken, or no-fail Breaded Chicken Cutlets.

Or keep things on the lighter side and serve honey ginger glazed carrots with grilled salmon, chicken, or pork chops. We also love the sweet/spicy/buttery flavor combo with meaty steaks!

Frequently Asked Questions

Do you need to boil carrots before roasting them?

Nope! Baby carrots roast beautifully in the oven, fresh from the refrigerator, with no need to boil first.

Is it better to cook glazed carrots on the stovetop or in the oven?

Both are great options. However, I prefer to oven-roast veggies whenever I can… This method allows you to be more hands-off and frees up a burner on the stove.
