Zesty Roasted Okra Recipe - Fresh summer okra roasted on a sheet pan with cumin, ancho chili powder, and garlic. This simple healthy side dish is fantastic!

  • Preheat the oven to 450 degrees F. Place the okra in the center of a large rimmed sheet pan and drizzle oil over the top. Add all seasoning and toss well to coat.
  • Spread the okra out in a single layer. Roast in the oven for 18-20 minutes. Shake the pan once at the 10 minute mark to turn the okra.

  10. Nothing beats fried okra, but this is a close second. Especially considering how healthy they are! I left mine in the oven a little longer because my oven seems to run cool. They were perfectly crisp and delicious.
