Back to School is just around the corner… can you believe it?

Now that my kids are eleven and nine, I love a fun recipe they can make themselves. Not only does it allow me a few hands-off moments in the kitchen, but they feel such a sense of accomplishment and pride in their kid-made meal.

Ava, in particular, has recently taken on a greater role in the kitchen.

She makes omelets and simple pasta dishes on a regular basis. I love watching her creativity in the kitchen.

Just look at this cute (and tasty) kid-friendly breakfast fruit pizza! She flattened canned biscuits into simple pizza crusts for breakfast fruit pizzas.

Once the crusts bake and cool, she mixed cream cheese with crushed pineapple and powdered sugar to make a sweet spread for the fruit pizza recipe.

Then she decorated the tops of each fruit pizza with fresh-cut fruit and berries.

My kids had big fun decorating these in different ways. Ava made hers into pretty flowers. Carson and I just piled on the toppings.

This simple fruit pizza recipe makes a marvelous breakfast for back to school, or a great after-school snack!

With just a few well-stocked ingredients, your babies can make their own breakfast fruit pizza in the morning, once school is back in session.

You could even send the baked crusts with a little container of sweet ricotta and some fresh-cut fruit in their lunch boxes for a sweet treat after their sandwich and veggies.

What Ingredients You Will Need

  • 8 jumbo biscuits – 1 refrigerated can
  • 8 ounces cream cheese softened
  • 1/3 cup drained crushed pineapple
  • 1/4 cup powdered sugar
  • 1 cup sliced strawberries
  • 2 kiwi sliced
  • 1/2 cup blueberries

No need for the pizza dough, pizza sauce, or other common pizza toppings, we are going for a sweeter recipe.

How to Make This Easy Breakfast Pizza

Preheat the oven to 375 degrees F and line two baking sheets with parchment paper. Lay four biscuits on each baking sheet and press them into flat 6-inch circles. Place them in the oven and bake for 10 minutes, until golden brown.

Meanwhile, drain and press the moisture out of the canned crushed pineapple. Mix it with the cream cheese, along with the powdered sugar.

Once the fruit pizzas are out of the oven, spread the tops with sweet cream cheese and top with fresh fruit. The kids will have fun decorating the top of each pizza!
