Ingredients Needed

  • Zucchini – medium size to replicate chips slices
  • Salt – to pull out the moisture from the zucchini once it’s sliced
  • Olive oil – or other preferred high heat and neutral-flavored air fryer oil
  • Garlic powder and ground black pepper – or other spice combos you love
  • Parmesan cheese – grated

How to Make Zucchini Chips in the Air Fryer

Set out a mandolin slicer, a medium bowl, and an air fryer. Adjust the mandolin slicer to slice at 1.5 mm. (On my mandolin this is the third smallest notch.)

Slice the zucchini into thin rounds, being extra careful when you get close to the end.

Pro Tip: If your mandolin has a handguard, use it!

Next, place the zucchini chips in the bowl and sprinkle with 1/8 teaspoon of salt. Toss well and allow the zucchini chips to sweat out their moisture for at least 10 minutes.

This step is crucial for just the right crispy, crunchy fried parmesan zucchini chips. Don’t skip it!

Place a long piece of paper towel on the countertop. Preheat the air fryer to 350°F.

Once the zucchini chips have had time to sweat, pour off the excess moisture and lay the zucchini chips in a flat layer on the paper towels. Press them gently to remove as much moisture as possible.

Move the zucchini chips back to the empty bowl. Drizzle with olive oil, then sprinkle with garlic powder, and black pepper. Toss well to coat the zucchini chips in the seasoning.

We tested this recipe so many ways in multiple air fryers. Some air fryers have extra-strong blowers and will push the thin chips into one corner causing them to not cook evenly. Flipping the chips and coating them and Parmesan makes a big difference!
