- Don’t over-mix the waffle batter! You want the batter to be smooth, but definitely not over-mixed. This can result in tough or rubbery waffles!
- Be sure to preheat the waffle maker and lightly coat with vegetable oil to prevent sticking!
- The waffle batter will expand as it cooks, so fill the waffle maker until almost the whole bottom is filled but not all the way!
- To clean the waffle maker, let it cool completely and then wipe down with a damp sponge or cloth, and then dry! Avoid using anything that isn’t rubber to scrape any pieces that are stuck, since it might ruin the nonstick coating.

- 2 ¼ cup all-purpose flour
- ½ cup cornstarch
- ¼ cup granulated sugar
- 1 ½ tablespoons baking powder
- 1 teaspoon salt
- 2 cups milk 2% or whole
- 2 large eggs
- ½ cup melted butter or oil
- 2 teaspoons vanilla extract
Instructions
- Preheat a waffle maker to high heat. Set the oven on 200 degrees F. Set a baking sheet, with a rack on it, in the oven to hold and warm the waffles.
- Meanwhile, in a large mixing bowl, combine the flour, cornstarch, sugar, baking powder, and salt. Whisk well.
- Then mix in the milk, eggs, melted butter and vanilla. Stir until the mixture is very smooth.
- Once the waffle maker is very hot, add approximately ½ cup batter (for a large Belgium-style waffle) and cook for 3 ½ minutes undisturbed.
- Open and remove the waffle when the exterior is golden-brown. Move the waffle to the warm oven and repeat with the remaining batter.
- Once all the waffles are cooked, let them rest in the oven for another 5 minutes to continue to dry and crisp.

The batter should be fine for 24-36 hours in the fridge. After that, it might not rise well when cooked.
You can also just freeze the made waffles and pop them in the toaster when you want to use them.
