Jalapeno Chicken
You know the cream cheese jalapeño poppers snacks? Of course you do! I’ve taken those iconic spicy and cheesy flavors to make a rich, creamy gravy that’s absolutely incredible to pour over tender chicken breasts. I use the same familiar combination of fiery jalapenos, cream cheese, and cheddar cheese in the sauce, so my jalapeno chicken has the pep and deliciousness we love. Best of all, everything comes together in one skillet in under 30 minutes!

Sometimes I catch myself on crazy hectic days when I’ve suddenly realized I have made zero dinner plans. That’s why I have a no-fail backup plan always in my pocket… I make some kind of chicken in a skillet with gravy. Here I’m sharing my simple creamy jalapeño chicken recipe as the ultimate midweek dinner with a kick! My husband likes to call it “jalapeno popper chicken” because the creamy sauce is made with jalapeños, cream cheese, and cheddar cheese. Like my creamy roasted red pepper chicken recipe, this simple skillet chicken dish is fabulous served over roasted potatoes, mashed potatoes, rice, or even roasted green vegetables. There’s plenty of creamy sauce to use as a gravy for your side dish as well!

Sommer’s Recipe Highlights
Creamy with a Kick – The flavors in the gravy are incredible and so well-balanced, with perky jalapeños and two types of cheeses. So I get that nice bit of spiciness that I crave; then the luscious, creamy sauce mellows the heat and adds in savory garlic to bring it all together.
30 Minutes or Less – I love a quick dinner (but who doesn’t?) like my family-favorite chicken and peppers recipe. I keep prep simple in this dish also, mostly just slicing and dicing jalapeños and onion. Then the chicken only takes 10 minutes to cook, and the cheesy sauce simmers up in another 10-ish minutes. Make your potatoes, rice, noodles, or whatever you’re serving with the chicken, while it and gravy cook. You’ll be ready for dinner in less than half an hour.
My Best Tips – This easy recipe isn’t exactly rocket science to make, but it sure is foolproof with my tips! From how to tell if a jalapeño is spicy without taking a bite, to how and why you should prep the cream cheese, I’m walking you through this easy recipe step-by-step. But since it takes only about 30 minutes to make don’t worry, it’s not a long walk.

Key Ingredients and Tips
- First, a quick tip to buy jalapeños – Using the right amount of jalapeno is quintessential to how much you will enjoy this recipe. Jalapeños can be sneaky… Some of them barely have any heat and others will knock you over. I suggest buying four jalapeños. Cut the top off one at a time, remove the seeds, and sniff them. If you can’t tell how hot the jalapeno is, touch the cut edge and then touch your tongue. You should have a good idea then! If you’re sensitive to spice, or your jalapeños seem very hot, you can use just one! But if they’re mild, I would use up to four.
- Chicken – I typically use boneless and skinless chicken breasts that are about 1-inch thick to make this cheese-heavy jalapeno chicken recipe slightly lighter. (You can flatten them a bit if need be by covering with plastic wrap and hitting with a meat mallet.) That said, fattier boneless and skinless thighs are also fabulous.
- Onion – Use your choice of sweet yellow onion or white onion with more bite.
- Cream cheese – I prefer to go all in with full fat cream cheese. But you can use a low fat cheese and it’ll still taste delicious.
- Chicken broth – Buy the box or make your own with bullion and water.
- Cheddar – If I have the time I like to shred my own cheddar cheese right off the block. It tastes freshest and doesn’t have any extra anti-caking ingredients. However, if I’m in more of a rush, or am just not feeling like putting in the effort, buying a bag of pre-shredded cheese is fine.
- Garlic – I absolutely recommend freshly mincing garlic for this recipe versus using minced garlic in a jar. Again, the flavor is way better!
- Butter – I like to use unsalted butter so that I have total control over the amount of salt that goes into the dish. You can also use a high heat cooking oil like olive oil, avocado oil, or canola oil.
- Scallions – I slice these up and sprinkle them on top of the jalapeños popper chicken when it’s time to serve. They add a nice fresh pop to balance the spicy and heavier gravy!
How to Make

Prep – I start by placing the block of cream cheese on the counter to soften. Bringing it almost to room temperature will help it to melt in the pan more quickly and evenly, and make it easier to whisk with the broth.
I remove most of the seeds and chop the jalapenos.* Then I peel and chop the onion and mince the peeled garlic.
*Note – Remember, the seeds and veins on the inside hold the majority of the heat, so remove them as you dice the jalapeños. Then wash your hands, and be careful not to touch your eyes!

Cook Chicken – Next, I place a large and heavy skillet on the stovetop over medium heat. I add the butter, and as it melts, I sprinkle the salt and pepper on both sides of the raw chicken pieces. Then I place the chicken in the pan with the hot butter. The butter doesn’t need to be popping, but should be hot enough to sizzle and quickly start to sear the meat. I cook the chicken for about 5 minutes on each side, moving the pieces around every minutes or two so they don’t burn.
When they are beautifully golden brown on both sides I use tongs to move the chicken breasts to a holding plate off to the side. But don’t wipe down the pan!

Sauté Veggies – With the stove still on medium heat, I add the jalapeño, onion, and garlic to the pan juices. I sauté the veggies for 3-4 minutes, stirring them every minute or two so they become slightly soft and brown, but not burnt.

Add Cream Cheese – By now my cream cheese has softened a bit and lost its chill. (This mom knows how that goes!) I add it to the pan with the pepper mixture and move it around for a few minutes, until it softens more and starts to melt. But keep an eye on the cheese so it doesn’t bubble up too much and scorch in the skillet.

Whisk in the Broth – When the cream cheese has nearly melted, I slowly pour in the chicken broth as I whisk. The broth should help continue to soften the cheese until you’re left with a rich, luscious sauce. I let it simmer on low for about 5 minutes, whisking every minute or so to keep the sauce from sticking to the bottom of the pan. It should start to thicken a bit, but not get clumpy. You might need to lower the stovetop heat slightly.
Sprinkle in More Cheese – Once the sauce has thickened nicely to a gravy-like consistency, I sprinkle in the shredded cheddar cheese. Use a spatula or spoon to stir it in gently, so the cheese shreds melt evenly into the jalapeño cream cheese sauce. Taste the gravy and season with salt and pepper, if you like, and try to keep yourself from drinking it up. Yes, it really is THAT good!

Add Chicken – Next, I place the cooked chicken breasts back into the pan with the gravy, and turn off the heat. This keeps the sauce from cooking down too much, and keeps the chicken from overcooking as well. With the heat off, turn the chicken pieces over and back again to get every bit completely coated in the cheesy sauce. You’ll spoon more gravy over the top when serving so don’t drive yourself nuts trying to get the sauce to stick or anything.
Then sprinkle the fresh chopped scallions directly into the pan with the gravy and chicken, or over top of each individual plate as you serve.

Serving Suggestions
This amazingly creamy cheese sauce is literally made to pour over your choice of starchy and carb-y side dishes! In this post I’m showing you pictures of me serving the jalapeno chicken with my favorite fluffy mashed potatoes.
It’s also fabulous with roasted potatoes, wide egg noodles, white rice… Or since there are big Tex-Mex flavors in the gravy, you can even try serving the chicken with Spanish rice or Chipotle-style cilantro lime rice!
Want to keep things on the “lighter” side to balance the richness of the gravy? Try my low carb cauliflower rice, or serve with roasted veggies like broccoli and cauliflower or garlic butter parsnips,
Storage Notes
These leftovers are fantastic! They’ll keep well for up to 3-4 days. However, I recommend that you store leftover gravy in a separate container from the chicken breasts so reheating is easier.
I reheat leftovers in the microwave, also in separate microwave-safe containers. Microwave both in short 30-60 second bursts at 50% power. Flip the chicken over after each burst, and be careful to not overcook it. The gravy should be stirred between each burst and you can add a splash of broth if you need to thin it back out a bit.
I don’t recommend freezing leftovers, as the cream cheese sauce doesn’t reheat quite right after cooking, freezing, and thawing.

Frequently Asked Questions
This is jalapeño popper chicken after all, so I don’t think it makes sense to try omitting the spice entirely. However, for the least spicy version you can use just 1 pepper with the seeds and veins thoroughly removed.
I haven’t tried this but I guess yes, technically? But I don’t think the sauce would have quite the same bright, peppy flavor as pickled jalapeños tend to lean more sour.
A broken sauce is usually the result of it being heated too high and too quickly. You want to combine the cream cheese and broth over medium to medium-low heat so that it just comes to a simmer, and continue stirring frequently.

Ingredients
- 4 boneless chicken breast or thighs (about 2 lbs)
- 2 tablespoons butter (or oil)
- 3-4 fresh jalapenos seeded and diced
- ½ cup diced onion
- 2-4 cloves garlic minced
- 8 ounces cream cheese softened
- 2 cups chicken broth
- 1 cup shredded cheddar cheese
- ¼ cup chopped scallions green onions
Instructions
- Dice the jalapeños, onions, and mince the garlic. Chopped the scallions and set them aside as a garnish. Set out the cream cheese so it's closer to room temperature when you add it to the pan.
- Set a large skillet over medium heat. Add the butter to the pan. Liberally salt and pepper the chicken pieces on both sides. Once the butter has melted, add them to the skillet. Brown the chicken for about 5 minutes per side. Then move the chicken to a holding plate.
- Add the jalapeño, onion, and garlic to the pan. Stir and sauté the pepper mixture until it’s soft, about 3-4 minutes.
- Add the cream cheese to the vegetable mixture and move it around the pan to soften. Then add the chicken broth. Whisk the chicken broth to melt the cream cheese bits into the sauce. Let the sauce simmer for about 5 minutes, stirring occasionally.
- Once the sauce is smooth and has thickened, sprinkle in the cheddar cheese, and stir to allow it to melt. Then place the chicken pieces back in the skillet and turn off the heat. Carefully turn the chicken pieces to make sure they are well coated on all sides. Sprinkle the top with fresh chopped scallions and serve warm with your favorite sides.
