Today’s beverage is the Watermelon Shrub Collins:

This drink is a good way to get acquainted with shrubs, or drinking vinegars.

Shrubs originated in the 17th century by using vinegar as a way to preserve fruit. They are now commonplace in bars and used as an alternative to citrus to provide acidity in a cocktail.


Watermelon Cocktail

The Watermelon Shrub Collins.


For the Watermelon Shrub:

  • 2 cups fresh watermelon juice
  • 1/2 cup granulated sugar
  • 3/4 cup white balsamic vinegar

For each Cocktail:

  • 2 oz Gin (or Vodka)
  • 1 oz Watermelon Shrub
  • 10 Mint Leaves (+ extra for garnish)
  • Soda Water


  1. To make the Watermelon Shrub: Juice enough watermelon to yield two cups of juice. Add ½ cup of sugar and ¾ cup of white balsamic vinegar to the watermelon juice. Shake the mixture vigorously until the sugar has dissolved.
  2. For the Cocktail: Shake all ingredients together and strain into a Collins glass. Fill with ice and top with soda water. Garnish with a mint sprig.

    I just finished the shrub part – dont have the vodka and soda yet. I tested the shrub by itself and the vinegar seems very strong, even though I didn’t even add the full amount. I’m going to get the other ingredients and try it but I’m a little worried.
