Today’s beverage is the Watermelon Shrub Collins:

This drink is a good way to get acquainted with shrubs, or drinking vinegars.

Shrubs originated in the 17th century by using vinegar as a way to preserve fruit. They are now commonplace in bars and used as an alternative to citrus to provide acidity in a cocktail.

  1. I just finished the shrub part – dont have the vodka and soda yet. I tested the shrub by itself and the vinegar seems very strong, even though I didn’t even add the full amount. I’m going to get the other ingredients and try it but I’m a little worried.

  2. This is going on my must-try soon list! Sounds amazing!
