There’s nothing like big pot of steaming chili to get you through the winter months. Filling and warming in both taste and temperature.
Yet, while so many of us are sticking to a new years diet, it can be tricky to find a chili recipe that delivers big flavor, without delivering big hips.
Well I’ve got one for you…
It’s a Healthy Slow Cooker Roasted Red Pepper Chicken Chili Recipe.
Robust. Sweet. Tangy.
Loaded with shredded chicken, red beans, and vegetables, all mingled together is a simmering bath of pureed roasted red peppers (instead of tomatoes.)
This healthy chili recipe is show stopper in taste, texture, and visual appeal.
Just look at that color!
My Roasted Red Pepper Chicken Chili Recipe is also very easy to make, and can be thrown in the crockpot first thing in the morning, for a ready-and-waiting meal when you come home.
It’s low in fat, high in protein and fiber, gluten free, and dairy free (unless you top it with sour cream) making this roasted red pepper chili recipe a great option for healthy eating plans.
Although well-seasoned, this is not a spicy chili, so it’s great for kids and those with spice sensitivity.
Yet feel free to add cayenne pepper, or your favorite hot sauce after cooking!

We didn’t have time to make this in the slow cooker, so we did the stove top instead. We only used about half a cup of broth after reading comments that it was soupy – more of a thick and chunky chili household! It turned out amazing. Definitely will make again.

In the crockpot at this moment, it smells great. We have a tomato allergy in the family so this will be the perfect Halloween chili treat!
Also, probably not necessary, but I actually put the roasted red peppers, chicken broth, and all of the spices in the vitamix together and blended the heck out of them which resulted in a super smooth chili sauce to pour over everything.
I’m really wanting to make it for a party…do you know what size crockpot this fits in?
Fits easily in a standard sized crockpot.

Just made this today and got rave reviews. It was so tasty! I did add a little crushed tomato I had leftover plus some green bell pepper, and left out the beans since we don’t care for them. Will definitely be making this one on a regular basis! Thank you!

I was too lazy to sautee the veggies first so I just threw it all in the Crock-Pot at once and gave it a quick stir. It was DELICIOUS. Spicy and hearty!
Hi Whitney,
Thanks so much for reporting back! I’m so glad you liked it!! :)
Made this for dinner and it was so flavorful. However, after looking at the ingredients today I realize that I forgot to add the 2 cups of chicken broth, ooppps. I couldn’t tell anything was missing and it still had plenty of liquid. So a good foolproof meal.
