  • Cut the avocados in half, remove the pit, and scoop the flesh out with a spoon. Place the avocado flesh in a medium bowl and pour the lime juice over the top. Use a spoon and fork to mash the avocado until mostly smooth.
  • Smell your jalapeño to test the heat… You can usually tell if you got a spicy one. Stir in the garlic, jalapeño (half or all), green onions and cilantro. Salt and pepper to taste. Stir in the diced tomato at the very end.
  • Serve immediately, or press plastic wrap down over the surface of the guacamole, removing all air bubbles, and refrigerate until ready to serve.

Frequently Asked Questions

How do I know when my avocados are ripe enough to use?

If you gently press the avocado slightly, you should be able to feel the softness of the inside. Just be careful not to squeeze them too hard, or you will bruise the unripened avocados.

Also, where the avocado was attached by the stem, you can peel the “button” off and see if the inside is green or yellow. 

How do you keep guacamole from browning?

The best way to save fresh or leftover guacamole from browning is to place it in an airtight container. Smooth the top in a flat surface.

Squeeze just a little extra lime juice on top of the guacamole, tilting the container to make sure it coats the entire surface. 

Then press a piece of plastic wrap against the surface to seal off any air. Cover with a tight lid and refrigerate.

When ready to use, you can pour off or mix in the added lime juice barrier. 

What if the avocados I have aren’t ripe?

No problem. Just place them in a paper bag with a banana overnight and like magic, they will ripen up!
