We all have our favorite summer salad. One that includes fresh seasonal produce at its peek, ushering in years of summertime memories of picnics and family reunions.
However, my nostalgic summer salad of choice is a Watermelon Feta Salad variation. A salad I’ve been making every summer since my wedding over sixteen years ago. Every time I make this salad, I’m reminded of that first newlywed summer in Oklahoma, sitting at the kitchen table in our first rental house, and my very first potted tomato plant.

This particular Watermelon Feta Salad with Golden Tomatoes and Tarragon, combines the crisp sweetness of ripe juicy watermelon with tangy yellow tomato wedges, aromatic tarragon and zingy red onion. The salty note of the feta accentuates these farm-fresh ingredients in the best possible way.

Watermelon Feta Salad with Golden Tomatoes and Tarragon

Gorgeous Watermelon Feta Salad with Golden Tomatoes and Tarragon drizzled with Sherry Vinaigrette. A chop salad that captures all the best flavors of summer.
- 1/4 ripe seedless watermelon, cut into 1/2 X 1 X 2 inch wedges
- 2 golden tomatoes, cut into wedges
- 1/2 red onion, sliced
- 8 ounces feta, cut into 1/2 X 1 chunks
- 3 tablespoons roughly chopped tarragon leaves
- 2 tablespoons olive oil
- 1 tablespoon rice vinegar
- 1 tablespoon honey
- 1 teaspoon dry sherry
- Salt and pepper
- Chop the watermelon, tomatoes, onion, feta, and tarragon and place in a large salad bowl.
- Whisk the olive oil, rice vinegar, honey, and sherry in a small bowl and season with salt and pepper to taste.
- Drizzle the vinaigrette over the top of the salad and gently toss.
