My roasted sweet potato recipe is one of those side dishes I can happily eat straight off the baking sheet! I toss bite-sized pieces with olive oil, cumin, and smoked paprika, then roast for about 30 minutes until they’re fluffy inside and caramelized around the edges. The savory spices balance their natural sweetness, and the simple toss-and-roast method makes them easy to fit into dinner.

Is it just me, or does anybody else feel almost “wrong” eating sweet potatoes as a veggie? They are so sweet, carby, and delicious, it’s almost hard to believe that sweet potatoes are also packed with all kinds of healthy minerals and vitamins! Sometimes I wind up cancelling out most of the nutritional benefits by adding butter and cheese (I am a Southern woman, after all), like in my scalloped sweet potatoes recipe. But this roasted sweet potato recipe is excellent for casual dinners or holidays when I do indeed want to keep things lighter, without giving up any flavor or comfort food appeal. It’s a simple side dish that includes combining cubes of raw sweet potatoes with a bit of oil and handful of spices, then roasting for a quick half hour until the pieces of potato are crispy golden on the outside and fork-tender.

Sommer’s Recipe Highlights

Sweet, But Not Too Sweet – Typically when I think of sweet potatoes at the holidays the first place my mind goes is to my classic sweet potato casserole recipe with marshmallows and brown sugar. Obviously I love that recipe, however, sometimes I don’t want that much sweetness in my side dish. These roasted sweet potatoes have a natural sweet flavor that’s mellowed a bit with the savory spices.

Versatile Side Dish – It’s the lovely combo of sweet and savory flavors that make this recipe truly a winner with nearly any main protein! Because the flavors are vibrant I think these potatoes are best with lean white meats like chicken, turkey, and pork. Which is especially terrific for Thanksgiving, Christmas, and Easter dinners.

Ridiculously Easy – Prep takes only about 15 minutes, and even less if you choose to leave the skins on the sweet potatoes. I simply scrub the potatoes before peeling (or not), cut them into cubes, toss with oil and spices, and roast! You don’t even need to fuss with lining the baking pan with parchment… The potatoes get the best caramelization when they’re roasted directly on the metal baking pan.

Key Ingredients and Tips

  • Sweet potatoes – Or yams. I use orange sweet potatoes, but this roasted sweet potato recipe also works beautifully with white or purple sweet potatoes.
  • Olive oil – I love to roast with olive oil because it usually has a mild taste and makes the potatoes crisp up nicely. You can use avocado oil or canola oil, or any other high-heat cooking oil you prefer.
  • Seasonings – I use a smoky, bold and savory combination of cumin, smoked paprika, garlic powder, salt and pepper.
  • Parsley – I like to sprinkle on a bit of fresh chopped parsley before serving. It brightens the sweet and savory flavors and adds a nice balance.

How to Make

Prep – I start by preheating the oven to 425 degrees, and get out an 18 x 13-inch rimmed baking sheet. While the oven preheats, I scrub the sweet potatoes very well to get off any dirt. It’s up to you whether or not to peel the sweet potatoes! Leaving the skin on does offer more nutrients and adds a nice bit of texture to the roasted sweet potatoes. I go back and forth with this, but here I’m cooking with peeled potatoes, which do crisp up more.

Slice and Dice – Now I use a sharp knife to cut the potatoes into 1/2 – 3/4-inch cubes. Try to make them as uniform as possible so the pieces cook evenly. Place the potatoes onto the baking sheet as you cut them. I try to work quickly (but carefully, of course!) because the potatoes will start to brown soon after they are sliced.

A spice mixture is being sprinkled over cubed sweet potatoes on a baking sheet.

Season – When I’m done cubing the potatoes, I drizzle olive oil over them right on the baking sheet. (This makes the pieces way crispier versus lining the pan with parchment.) Then I sprinkle on the salt, pepper, cumin, smoked paprika and garlic powder over the potatoes. I use my hands to toss everything together… You can use a spatula or utensil, but I like to really get in there and make sure every bit of each potato is coated in the oil and spices.

Spread Them Out – After seasoning I spread the cubes out across the baking sheet in one even layer. I try to keep them from touching as much as possible, so each piece has a bit of room around it that allows the hot air to come through and make the potatoes crispy. Otherwise, an overcrowded pan will cause steam to build up and make the potatoes soggy. I recommend using two baking pans or working in batches if one baking sheet can’t comfortably fit all of the pieces.

Roast and Flip – Next, I pop the baking pan into the oven and set the timer for 15 minutes. Once it goes off I use a spatula to carefully flip the sweet potatoes over. Be sure to spread them back out! This helps the cubes roast perfectly with crisp, gold brown edges on all sides.

Then back into the oven go the sweet potato cubes to roast for 15 more minutes. However, be sure to keep a close eye on the pan after about 10 minutes, as the delicate potatoes can start to get too brown quite quickly. I know they’re done when I can easily stick a fork into the middle. I promptly pull them out of the oven, and sprinkle with chopped parsley as a finishing touch.

Serving Suggestions

I think the bright flavors of the sweet potatoes and savory spices go particularly well with lighter proteins, like lean chicken and pork dishes. Simple mains, like…

Like my mashed sweet potatoes, and as I mentioned earlier, this roasted sweet potatoes recipe is a great Thanksgiving and Christmas side dish that’s not so rich as other traditional holiday recipes made with butter, milk, etc. Serve them with a crock pot turkey breast or smoked turkey breast, cornish hens, or a spiraled ham.

Roasted sweet potatoes are also fantastic to load onto salads and grain bowls, and use in wraps! Let pieces cool completely before adding them. If you are have leftovers to keep, like a salad, I recommend storing the potatoes separately from other component

Storage Notes

I transfer the cooled roasted sweet potatoes into an airtight container, trying not to pile them on top of each other too much to keep them from getting super squishy. The potatoes will keep well for up to 5-7 days in the refrigerator. However, like my sweet potato hash, I try to eat them within a couple of days as they’ll continue to soften the longer they sit.

Along the same lines, I don’t recommend freezing leftovers. They’ll get mushy after roasting, freezing, thawing, and reheating.

To reheat the refrigerated sweet potatoes, I usually roast them again in a 400 degree oven for 5-10 minutes. This helps them crisp back up on the outside and makes the inside of the potato warm and fluffy again. Air frying also works well! (The air fryer also works well for making air fryer sweet potato fries :)) You can air fry the cubes the same way as baking, at 400 degrees for about 5 minutes. With either method you should flip them around at the halfway mark of cooking.

Yes, you technically can reheat them in the microwave. But I think this should be a last resort whenever I reheat any fresh cooked veggies! Microwaving will get the pieces of potato hot, but it can’t get the outsides of the potatoes brown and crisp again.

Frequently Asked Questions

Why are my roasted sweet potatoes soggy?

Soggy sweet potatoes are usually the result of the pan being overcrowded and/or the oven isn’t hot enough. I know it can be annoying, but you really do need to work in batches if all of the cubes can’t lay in a single layer on the baking pan without being crammed on there.

Why aren’t my potatoes crispy?

Take the time to make sure each chunk of potato is coated in the olive oil. And don’t roast the sweet potatoes on parchment or anything… They need to be roasted directly on the metal baking sheet in order to get the outsides crisp while the insides of the potatoes are tender and fluffy.

Do I have to peel the potatoes first?

I like to peel my potatoes before roasting, but no, you don’t have to. Sweet potato flesh has lots of vitamins and minerals, and the skins are positively packed with fiber and vitamins like A, C, E and B6. Plus they contain a great amount of crucial minerals, like iron and potassium.

Roasted Sweet Potato Recipe

Prep Time: 15 minutes
Cook Time: 30 minutes
Total Time: 45 minutes
In this roasted sweet potato recipe I toss bite-sized pieces of sweet potato with olive oil and savory spices, like cumin and smoked paprika, then spread them out on a baking sheet and roast. Only 30 minutes later and these delightful savory and sweet roasted potatoes are soft and fluffy on the inside, perfectly caramelized and lightly crisp outside, and ready to serve as a delicious side dish with your favorite main proteins!
Servings: 4 Servings

Ingredients

  • 2 large sweet potatoes or yams (about 2 to 2 ½ pounds)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ½ teaspoon garlic powder
  • 1 tablespoon chopped fresh parsley

Instructions

  • Preheat the oven to 425°F. Set out a large 18 x 13-inch rimmed baking sheet.
  • Scrub the sweet potatoes well. Peel them if desired, or leave the skins on for extra texture and nutrients. Cut the sweet potatoes into evenly sized ½ to ¾-inch cubes and place them directly on the baking sheet.
  • Drizzle with the olive oil and toss immediately to coat the potatoes. Sweet potatoes begin to oxidize quickly after cutting, so coating them with oil right away helps prevent browning.
  • Sprinkle the salt, pepper, cumin, smoked paprika, and garlic powder evenly over the sweet potatoes. Toss well until every piece is evenly coated with the oil and seasonings. Spread the sweet potatoes into a single layer, leaving a little space between the cubes so the hot air can circulate.
  • Roast for 15 minutes. Remove the pan from the oven and flip the sweet potatoes with a spatula. Spread them back into an even layer and return the pan to the oven. Roast for an additional 15 minutes, or until the sweet potatoes are fork tender with lightly caramelized, crispy edges.
  • Sprinkle the roasted sweet potatoes with the fresh parsley and serve warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5-7 days.
Reheat in a 400°F oven or air fryer for 5 to 10 minutes to help restore the crispy edges.
Note: Microwaving will warm the potatoes but soften the exterior. I don’t recommend it!
