We’re serving up a delicious Crock Pot Pork Loin Recipe… But first, let me just say, I never get tired of simple crock pot meals. Especially those that are healthy, yet cozy and inviting.
We eat a lot of chicken and fish in our house, with the occasional grilled steak on the weekend.
Yet one protein I feel often gets sadly overlooked is good ol’ pork. In the summer I tend to grill whole pork tenderloin and serve it with salad. However, the rest of the year I almost forget it exists. What a shame.
I’m trying to remedy the pork-less rut this spring, by cooking some of my favorite pork laden comfort foods.
Crock Pot Pork Tenderloin with Vegetables is an old classic I’ve made for years, just not as often as I would like.
It’s extremely simple to make, with just one whole pork tenderloin, a few veggies, and a simple pour-over sauce that turns into a rich savory-sweet gravy while cooking. What’s not to love?
Slow Cooker Pork Tenderloin Ingredients
Here’s what you’ll need for this simply delicious pork loin roast recipe.
- Pork Tenderloin – Or Pork Loin. To determine which one is best for you to buy, scroll down to the next section. Other than that, this is the main star of this dish.
- Baby Potatoes – This is the starch of the dish. Who doesn’t love potatoes with a meaty meal?
- Baby Carrots – To make this roast a little healthier (and sweeter) we are adding carrots. They balance the rest of the flavors perfectly.
- Red Onion – If red onions don’t go over well with your family, substitute them for yellow onions. When cooked they practically taste the same.
- Garlic – For flavor and seasoning.
Now for the sauce which marinates the pork and the vegetables and eventually turns into the gravy.
- Musselman’s Apple Butter – This brings a distinct sweetened cinnamon-y applesauce flavor to the sauce.
- Dijon Mustard – To balance and compliment the apple butter with tangy flavor.
- Low Sodium Soy Sauce – To add salt and depth. But don’t add too much, a little goes a long way.
- Beef Broth – Even though this is beef-flavored broth, it goes perfectly with our pork loin recipe!
What Is The Difference Between Pork Loin And Pork Tenderloin?
Although they sound alike Pork Loin and Pork Tenderloin come from different parts of the pig.
A pork loin is a larger and often tougher cut of meat that usually needs to be cooked for a much longer period of time.
However pork tenderloin is long and narrow, so it cooks much faster than pork loin. It’s great for grilling! Yet make sure not to overcook it because it dries out quickly.
Fortunately, in this recipe, the crock pot makes it possible to use either pork tenderloin or pork loin.
How To Make Crock Pot Pork Loin With Vegetables
- Place a large nonstick skillet over medium-high heat. Once hot, season the pork tenderloin with salt and pepper and lay it in the skillet. Sear the pork loin on all sides to seal in the juices and create a crust. (If using a regular skillet, add 1 tablespoon oil.)
- Cover the bottom of a largeĀ 6-quart crock potĀ with the chopped onions, baby potatoes, and carrots. Lay the seared pork loin over the top and surround it with the remaining vegetables.
Gravy For Slow Cooker Pork Roast Recipe
- In a small bowl, whisk together minced garlic, dijon mustard, soy sauce, beef broth, and a surprise ingredient, Musselman’s Apple Butter for a thick zesty sauce with a touch of sweetness.
- Pour the mixture over the pork and vegetables.

Slow Cooker Pork Loin
- Cover the crock pot and turn on low for 6-8 hours, or high for 2-4 hours. Once the potatoes are fork-tender, dinner is ready.
- Take out the tenderloin and cut into thin slices. Place on a platter, surrounded by vegetables.
- Taste the gravy, and season with salt and pepper as needed. Then pour the gravy over the pork and serve.

Do I Have To Sear It Before Slow Cooking?
Searing the pork loin helps lock in the juices and also give the exterior an appealing appearance. You do not have to sear it first, but it will definitely look and taste better if you do.
Can Crockpot Pork Roast Be Made With Chicken Broth Instead?
Yes, it can! Use either beef or chicken broth. If you are looking for a recipe using less salt try using low sodium broth.
Can’t Find Apple Butter!?

Crock Pot Pork Tenderloin with Vegetables
Ingredients
- 1 1/2 – 2 pounds pork tenderloin or pork loin
- 1 1/2 pounds baby potatoes
- 1 pound baby carrots
- 1 large red onion, peeled and cut into large chunks
- 4 cloves garlic, minced
- 1/2 cupĀ Musselman’s Apple Butter
- 1/3 cup Dijon mustard
- 1/3 cup low-sodium soy sauce
- 1 cup beef broth
- salt and pepper
- Chopped parsley for garnish
Instructions

Great recipe. One little step I added was deglazing the pan with a little of the beef broth after searing the loin.
Crazy question and since the pork does not have to be seared, can I use frozen pork? I do several recipes with the pork frozen and it ends up moist but do not know in this recipe

Quick Question: I just purchased a 7qt CrockPot. Will the measurements of the ingredients/time stay the same? I’m finding that having a 7qt instead of 6qt is posing a problem for recipes :(

This dinner was a huge hit for Motherās Day! Definitely get the low sodium soy sauce. I could only find regular and the āgravyā was a bit salty for my taste but the flavors are delicious. I too poured the droppings into a pan on the stove and added cornstarch to thicken as I doubled the recipe. A little sauce goes a long way. We have gravy left over to freeze and use at a later date!Ā
This was delicious. I used pork loin and cooked 6 hrs on low in crock pot. The loin was about 2.5 lbs. Definitely sear it and definitely use the apple butter. I wasn’t sure on that but the sauce was addictive. I used an extra cup of broth so it wasn’t really gravy. I used extra potatoes and the were drying out because they weren’t in the liquid. Anyway, i didn’t need it. They would have been fine.

Yum! I did not have apple butter so used unsweetened applesauce along with a little nutmeg, clove and cinnamon. Also did not have soy sauce so used Worcestershire. Cooked on high 4 hrs and meat was very tender.

If your slow cooker is large enough, you should be able to fully double the recipe, to make sure you have enough sauce and veggies to accompany the pork. It will take a little longer to cook… About 8-10 hours on low. :)

It depends on the size of the potatoes. If you buy the mini potatoes, you can leave them whole.
This was one of THE best dishes I have made. I will admit that I did not use the Apple Butter because it did not appeal to me. We loved it and it will definitely be a regular on my dinner table.
I did not make this recipe yet but would love to try it in the instant pot (IP); any recommendations?
I would brown it, then add all to the IP and cook on high pressure for maybe 10 minutes – long enough to cook the veggies as well as the meat. Let the pressure release naturally for 5-10 minutes and then release it all. You may want to thicken the sauce with some cornstarch, etc, since the IP doesn’t let the moisture evaporate while it’s cooking. That’s my take on it anyway, based on other similar recipes I have. Good luck – I’ll make it that way too. I love the apple butter ingredient!
I made this, but (like lots of others Iām sure) didnāt have any apple butter handy. I substituted with honey and it was delish, but more of a tangy honey mustard taste. Ā Iāll have to think ahead next time and buy apple butter!
