Sommer’s Recipe Notes

We love to cook at home, like, a lot (obviously). But sometimes this chef needs a ‘lil break and inspiration from outside of the home – and one of our family’s top fast-casual restaurants to visit is PF Chang’s Asian Bistro. My personal fave on the menu is the Chicken Lettuce Wraps, with zesty ground meat loaded into crisp leaves of butter lettuce.

The simple copycat recipe makes lettuce wraps that are just as good, if not better, than the restaurant variation. And in fact, they are so easy to make, whipping up the flavorful chicken mixture at home feels like a staycation from cooking… Yes, you are technically in your house doing the things, but with barely any effort!

Why We Love These PF Changs Lettuce Wraps

  • Fresh and flavorful – The combination of fresh green onions, garlic, and ginger mixed with crunchy water chestnuts and a simple glaze creates a wonderfully sweet and spicy filling for butter lettuce leaves. And yay for having complete control over the quality of ingredients included!
  • Quick and easy – You only need 20 minutes to make this dish. That’s way less time than it takes to drive to a restaurant and get seated! (And pants are totally optional.)
  • Great for gatherings – Serve the ground chicken filling, lettuce leaves, and other toppings buffet-style and let everyone load up their own wraps.

The filling can even be cooked in advance and reheated, making it perfect for making ahead for dinners and including it in your weekly meal prep plans.

Ingredients and Tips

  • Ground chicken – Lean ground white meat chicken is traditional for this copycat PF Chang lettuce wrap recipe, but ground turkey works just as well.
  • Cooking oil – We’re using sesame oil for its light, nutty taste. However, any high-heat and neutral-tasting cooking oil will do, such as avocado oil or canola oil.
  • Aromatics – A trio of fresh onions, garlic, and ginger gives the dish its signature bright and fragrant flavor.
  • Water chestnuts – These add a phenomenal pop of crunch with a mild taste.
  • Sauces – This chicken lettuce wrap recipe includes hoisin sauce, low-sodium soy sauce, and fiery sriracha hot sauce (optional, but highly recommended).
  • Lettuce – Butter lettuce leaves are the best for making wraps, in my opinion. They are strong but supple, and just the right size for folding around the ground chicken and eating like a taco.

How to Make PF Chang’s Lettuce Wraps

Tip for Success – Do not salt the chicken filling while cooking. Hoisin sauce and soy sauce are both high sodium. We suggest using low-sodium soy sauce and reducing the amount if you are particularly sensitive to sodium.

Storage

  • Storing Leftovers – The ground chicken mixture is fabulous for meal prepping! Store cooled leftovers in an airtight container, separate from the lettuce leaves, and keep in the fridge for up to 3 days.
  • Freezing – For longer storage, you can freeze the cooled filling mixture in an airtight ziploc bag for up to 2 months. Thaw it in the fridge overnight before using, or gently reheat to serve.
  • Reheating – I suggest reheating the chicken in the microwave in short 20-second bursts at 50% power, stirring between bursts. You can also reheat it on the stovetop, in a skillet or cooking pot. You might need to add a splash of water to loosen the ground meat mixture as it reheats.

Serving Suggestions

Serve the chicken and fresh lettuce separately, allowing guests to assemble their wraps as they prefer. You can add more topping options on the table, too – like crunchy Chinese rice noodles, sliced green onions, and/or shredded carrots.

Make it a full meal by pairing this copycat PF Chang lettuce wrap recipe with other Asian-inspired side dishes, such as Chinese dumplings, egg drop soup, or vegetable lo mein. Or keep things simple with bowls of fluffy white rice or low-carb cauliflower rice.

Ingredients

Instructions

  • Set a large skillet over medium heat on the stovetop. Add the sesame oil and ground chicken to the skillet and break it apart with a wooden spoon. Continue to stir and break up the chicken until it is cooked through about 5 minutes. Make sure that chicken is broken into very small pieces.
  • Add the green onions, minced garlic, and grated ginger. Stir and sauté the aromatics for another 3 minutes.
  • Now add the water chestnuts, hoisin sauce, soy sauce, and Sriracha. Stir and simmer for 1-2 minutes to thicken the sauce.
  • Gently break the butter lettuce leaves off the stem. Stack them on a serving platter then scoop the chicken filling onto the platter or in a bowl.
  • To serve, scoop about 2 tablespoons of filling on each lettuce leaf, fold like a taco, and enjoy!

Frequently Asked Questions

Are lettuce wraps spicy?

The ground chicken filling has a slight spicy kick, but you can simply omit the sriracha for a mild lettuce wrap recipe.

Are these chicken lettuce wraps low carb?

Not exactly… While they may seem low in carbs due to the absence of rice or other starches, PF Chang’s lettuce wraps are made with hoisin sauce, which is high in sugar and carbs. But there are several keto-friendly brands of hoisin you can try for a lower carb recipe.

Can I double this recipe?

Sure! As-is, this recipe makes about 6 servings. Double the ingredients and work in batches to make enough servings for a big meal to feed a crowd, or to have leftovers for meal-prepping lunches throughout the week.
