Peppermint Rice Krispies Snowballs

Team Asheville, comprised of Amy from She Wears Many Hats, Julie of Mommie Cooks, Robin of Add a Pinch, and myself, played around with several different ideas for our final entry, but when the krispie dust settled and the marshmallows were all melted and eaten, what we we were left with was a cold weather treat that would have even the Grinch sneaking back for seconds.
The theme presented to us by Rice Krispies was Winter Holidays and what better way to ring in the cold weather season than with a steaming cup of hot cocoa and a peppermint Rice Krispies snowballs accompaniment?
Peppermint is a flavor that we can all associate with winter. There’s just something about that cool, sweet punch on the tip of your tongue that makes the frosty temps a bit more welcome. For our Rice Krispies Treat, we incorporated crushed up candy canes and white chocolate to the traditional recipe. A few sprinkles of holiday cheer and a candy cane hanger completes the confection.
Peppermint Rice Krispies Snowballs can be made one of two ways. You can either melt the white chocolate chips along with the peppermint into the marshmallow mixture for a quick and simple sweet bite or leave them out and use a melted chocolate coating to harness your holiday sprinkle creativity.
You can also try using a fun shaped cookie cutter to inspire your own unique hanger shapes similar to this adorable edible snowman.
We hope these Peppermint Rice Krispies Snowballs will become a sweet addition to your winter holiday traditions!
Peppermint Rice Krispies Snowballs
Ingredients
- 1/4 cup butter
- 10 ounces marshmallows
- 1/3 cup crushed candy canes
- 6 cups Rice Krispies cereal
- 28 ounces white candy melts
- 2 tablespoons vegetable oil
- 24 mini candy canes
- Holiday sprinkles
Instructions
- Melt the butter in a large saucepan over medium low heat.
- Add in the marshmallows and allow them to melt completely.
- Add in the crushed candy canes.
- Remove the pan from the heat and stir in the Rice Krispies.
- If making balls, pull out heaping tablespoons from the pan and roll into balls. Add a candy cane into the center of each ball.
- If making cut out shapes, press the Rice Krispies mixture into a pan prepared with cooking spray.
- Allow to cool for about five to ten minutes and then cut out your favorite shapes.
- Add a candy cane into the top end of the treat.
- Place your finished treats into the fridge for about 15 minutes to cool down.
- Melt the candy melts according to package directions and add in the vegetable oil to thin the mixture.
- Dip your cooled treats into the chocolate, sprinkle or decorate, and set aside to cool and harden completely.

I just love this idea! I have a recipe for ginger cookies that is a favorite of mine around the holidays. They are so warm and spicy. Perfect for warming you up on a cold night.

I love all the baking that comes with the Christmas season.
My favorite holiday flavors are spices like cinnamon. I love peppermint too but still gravitate toward “chai” spices any time of the year.
This may not sound like a holiday flavor, but the only time I ever eat peanut butter treats is at Christmas, so it’d have to be that one. I do love apple pie, cranberry anything, rosemary in savory foods…all of that is kinda christmassy too.

My favorite holiday flavor has to be peppermint. It just reminds me of snow and Christmas and everything good about this time of year.

These are great! I love peppermint during the winner (especially ice cream — yum!), but have never tried it this way. Love the way you have them hanging of the mugs. Very cute.
