Why We Love This Hugo Spritz Recipe

As the weather heats up for summer, it’s time to turn the temperature WAY down and whip up some ice-cold cocktails. A Hugo Spritz AKA St-Germain Spritz is a chilled herbaceous aperitif wine spritzer that tastes delightful for spring and summer!

This Italian Prosecco spritz recipe is very simple to make in a hurry, but the drinks *seem* fancy and are sure to impress guests. The lineup of fine ingredients is really what makes the cocktail so glorious… The star here is the Saint Germain elderflower liqueur, which has a delicate herbal flavor that is a great addition to light, refreshing cocktails.

We also include bubbly lemon soda, Prosecco, and plenty of ice and fresh mint leaves. Together, the drink is perfectly cold, not too sweet, and absolutely lovely! Serve these at summer pool parties, evening cocktail parties, or enjoy one (or two) on the patio after work to beat the heat with a bit of refinement.

Ingredients You Need

  • Prosecco – your choice of dry, brut (very dry), or sweeter demi-sec sparkling white wine
  • St. Germain Elderflower liqueur – a sweet distilled spirit key to make a Hugo spritz
  • Lemon sparkling water – any brand of soda water (club soda) you want, like La Croix
  • Mint leaves – fresh and thoroughly rinsed mint sprig
  • Lemon – cut into thin, round slices
  • Ice – cubed or crushed

On top of the Hugo Spritz ingredients, consider additional fun garnishes like: raspberries, strawberries, lime wheels, lemon balm, basil leaves, or rosemary sprigs!

How to Make a Hugo Spritz with Saint Germain

  1. Place the mint leaves and St. Germain in a wine glass. Use a spoon with a long handle to combine them and infuse the mint into the liqueur. Don’t push so hard to break the glass. But you do want to muddle them together well to release the mint’s fragrant oils.
  2. Next, fill the glass about halfway full of ice cubes. Pour the Prosecco and sparkling lemon water over the ice. Be gentle when pouring so a large head of foam doesn’t form.
  3. Stir the drink again, and add 1-2 lemon slices.

Cheers!

Recipe Variations & Tips

  • Add a twist on the typical citrus and try an elderflower spritz with bubbly lime soda and fresh lime slices.
  • Choose ice cube shapes and sizes that don’t quickly melt to dilute the drink. I suggest medium-size or crushed ice cubes. Large pieces of ice tend to sweat easily.
  • Make and serve a Saint Germain Spritz in a stemmed wine glass rather than a stemless glass. You don’t want your warm hand to touch the glass and melt your beautifully refreshing drink!
  • This recipe makes one beverage. Use our serving slider to multiply the recipe for larger batches.
  • Don’t make this cocktail ahead of time! The bubbles are bubbliest and best freshly poured. Thankfully they take mere moments to prepare!

Frequently Asked Questions

What kind of alcohol is St-Germain?

Saint Germain is made with grapes, fresh elderflowers, and plenty of sugar. Because of its high concentration of sugar, it’s actually considered an elderflower cordial liqueur.

What is the difference between an Aperol and Hugo Spritz?

Both are refreshing drinks that include sparkling wine. The main difference is that traditional Italian Aperol is made with a bitter orange alcohol, whereas a Hugo Spritz is made with St-Germain, which has a nice floral flavor.

Is Hugo Spritz popular in Italy?

Yes, it is a trendy aperitivo cocktail! Not only is the St-Germain elderflower spritz popular in northern Italy, but it has quickly become a favorite drink with bartenders and home mixologists, throughout Europe and North America.
