When you take your first bite, you will hear Celine Dion bellowing “My Heart Will Go On” and a bare-chested Gerard Butler will burst out of a cloud of murky haze, sword in tow.

Like a dark alluring story with a bitter-sweet ending, these homemade brownies will draw you in and captivate your attention.
This is the most dense, fudgy, silky, melt-in-your-mouth, buttery, desperately-need-a-glass-of-milk fudge brownie recipe you’ve ever tasted. And certainly not cakey, but offers a rich chocolate flavor and crackly top.

One more thing, the underlying flavor of dulce de leche, is not for show, or to seem “salted caramel brownie” trendy. This caramel is subtlety working its magic in the dark shadows. Deepening the flavor, providing extra moisture.

What Ingredients You Will Need
- 1 pound dark chocolate chopped
- 1 1/2 cups unsalted butter
- 13 ounces dulce de leche
- 1 cup granulated sugar
- 1 tablespoon vanilla extract
- 6 large eggs
- 1 2/3 cups all-purpose flour
- 1/3 cup unsweetened cocoa powder
- 2 1/2 teaspoons salt
- 1 tablespoon instant coffee granules
- 1 cup milk chocolate chips or chocolate chunks
- 1 cup chopped nuts or could be toffee bits, crushed Oreos, mint chips, etc.
How to Make The Best Brownies from Scratch
Prep. Preheat the oven to 350 degrees F. Grease a 9×13-inch baking pan and set aside. (Or line the pan with parchment paper.)
Warm Ingredients. Melt the butter, 1 pound of chocolate, and dulce de leche together in the microwave oven or in a double boiler. If melting in the microwave, heat for 60 seconds, then stir. Repeat in 30-second increments, if needed. Allow to cool a little.
Dry Ingredients. Mix flour, cocoa, salt, and coffee granules together in a separate bowl. (The coffee granules increase the taste and flavor of the chocolate.)
Wet Ingredients. Whisk eggs, sugar, and vanilla into the chocolate mixture. Then slowly incorporate the dry mixture ad whisk until just combined. Finally, add the chocolate chips and chopped nuts, and stir well.
Bake. Pour the caramel brownie batter into the prepared pan and bake for 35-45 minutes. DO NOT OVERBAKE. Check at 35 minutes with a toothpick. The moment the toothpick comes out mostly clean, remove from the oven. The brownies continue to cook a little as they’re cooling, but you don’t want them to be overcooked.
Allow the brownies to cool completely. Cut into 12 large, 18 medium, or 24 small squares. Clean the knife with a paper towel in between cuts to ensure the edges are as smooth as possible. Carefully remove the fudgy brownies with a spatula.

You can store these brownies in an airtight container at room temperature for up to 5 days, or in the refrigerator for up to 7 days.
Can I freeze brownies?
You can store individually wrapped brownies in plastic wrap and in a ziplock bag in the freezer for up to 3 months.
What dulce de leche substitutions could I make in this perfect brownie recipe?
The caramel sauce would work for flavor, but it might change the texture of the brownies. You can buy Dulce de Leche at Walmart, if you can’t find it anywhere else.
Did you use baking chocolate or dark chocolate?
In this recipe, you can use either type of chocolate. The amount of sugar in dark chocolate will not make a difference, as opposed to unsweetened baking chocolate. Hope this helps!

Does it matter what pan I use to bake brownies?
I used a ceramic pan to bake these, but you can also use glass pans or metal pans. The cooking time should be pretty similar. Just use the toothpick hack to see if they are baked through!

These look scrumptious! Just curious, the Dulce De Leche is just sweetened condensed milk right? or can you actually by the caramel in a can? I know you can simmer condensed milk in a stockpot for hours to turn it into caramel, but you don’t do that for this recipe right? You can buy the dulce de leche in the can already caramelized. It’s usually in the baking aisle or in the ethnic food section. It’s a little more expensive than sweetened condensed milk, but saves loads of time. :)
