We already have a fabulous cake mix cookies recipe here on the site. However, we’re taking things just one step simpler by introducing Cool Whip cookies. This easy cookie recipe is made with only 2 ingredients: A tub of Cool Whip topping, and a boxed cake mix, any variety.
The cookies are crispy on the outside and have a super-soft texture in the middle. They’re perfect to whip up in a pinch. You can make any flavor you like, based on the type of cake mix you pick, and they take just a few minutes to prep for the oven. They are perfect for an afternoon snack or dessert!

- Cool Whip – here we use the signature tub, but you can use other brands of frozen whipped topping

How to Make Cool Whip Cookies with Cake Mix
Pro Tip: Before getting started, be sure to let the Cool Whip thaw in the fridge a bit per the package instructions. It needs to be defrosted enough to combine with the cake mix.
- When ready to bake, first preheat the oven and set out two baking sheets. Line them both with parchment paper or silicone baking mats.

- Pour the boxed cake mix into a large bowl. Then scoop in the thawed whipped dessert topping. Use a spatula to gently fold the two ingredients until the mixture is smooth and uniform.
Pro Tip: The dough will be very thick and sticky, but be careful to not over mix the cookie dough… The lightness of the whipped topping is what makes the cookies puff up nicely without eggs.

- Using a 1.5 tablespoon scoop, portion out cookie dough balls and place them on the prepared baking sheets, about 2 inches apart. They will spread a good bit so be sure to give each cookie enough room.

cake mix boxes have gone for m 18.5 to 15.5 to 13.5 oz in recent years. what size box are you using here? are there adjustments if we only have the smaller boxes available?
