Sometimes I get bored with vegetable side dishes. Whew! I’m glad I got that off my chest.

I know I need them in my life. I know I need to feed them to my family. I know there are tons of veggie options out there. Yet I still get stuck, on occasion, making the same three or four sides over and over again.

This happens to all of us… Even recipe developers. So don’t feel bad when it happens to you!

In my mind, the best way to fix a vegetable rut is cheese and spices.

Together, these two magical ingredients can breath life into any veggie we are tired of. They can rekindle the fire, so to speak.

  2. I MADE THIS recipe yesterday.  I only used two zucchini so that I would have some of the mixture left over for the two of us.  I placed the remainder on salmon and baked both at the same time.  The zucchini was a total winner and loved the fish as well.  Thanks for such an amazing creole recipe.  Will do this again and again.
