Just toss raw zucchini in a simple grated parmesan-spice blend and lay them out on a baking sheet. Then roast in the oven until golden.

Crispy Creole Roasted Zucchini
- 3 large zucchini, cut into 1/4 inch slices
- 1 cup grated parmesan cheese
- Zest of 1 lemon
- 1 1/2 teaspoons creole seasoning
- 1 1/2 teaspoons italian herb seasoning
- 1/2 teaspoon ground black pepper
- Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.
- Pour the grated parmesan cheese, lemon zest, cajun seasoning, italian seasoning, and black pepper in a large bowl. Mix well. Then add in the zucchini slices. Toss well to coat the zucchini on all sides.
- Lay the zucchini out on the baking sheet in a single layer. Roast in the oven, on the center rack, for 6 minutes. Then turn on the broiler and broil for 2-4 minutes until golden and crispy. Serve warm.
