Crispy Creole Roasted Zucchini Recipe - A simple healthy vegetarian dish with huge wow-factor! This low carb dish is both a side dish and a party snack.

Ingredients

Instructions

  • Preheat the oven to 400 degrees F. Line a large baking sheet with parchment paper.
  • Pour the grated Parmesan cheese, lemon zest, Cajun seasoning, Italian seasoning, and black pepper in a large bowl. Mix well. Then add in the zucchini slices. Toss well to coat the zucchini on all sides.
  • Lay the zucchini out on the baking sheet in a single layer. Roast in the oven, on the center rack, for 6 minutes. Then turn on the broiler and broil for 2-4 minutes until golden and crispy. Serve warm.

I MADE THIS recipe yesterday.  I only used two zucchini so that I would have some of the mixture left over for the two of us.  I placed the remainder on salmon and baked both at the same time.  The zucchini was a total winner and loved the fish as well.  Thanks for such an amazing creole recipe.  Will do this again and again.
