Usually if I’m dreaming about food, the dreams involve chocolate or steak. But lately, all I can think about are quick and intriguing side dishes that are easy to throw in a picnic basket or pair with a main course, straight off the grill.
It must be the weather.
Warm weather effects people in different ways. It makes me want more green on my plate, whether in salad-form or something like this pasta with peas.
In this Pasta with Peas Smoked Almonds and Dill, what really sets off the dish is the sprinkling of chopped smoked almonds. The crunch and smoky essence of the almonds, against the sweetness of the peas, and the herby mix of dill and green onions, makes a diva of a side dish. This Pasta with Peas Smoked Almonds and Dill screams to be the center of attention. So much so, that it makes a marvelous vegetarian main course!
My only cooking note for this Pasta with Peas Smoked Almonds and Dill dish is that the almonds make the most impact when they are added at the last minute and sprinkled on top, not mixed in.

Pasta with Peas Smoked Almonds and Dill
Ingredients
- 16 ounce small dry pasta such as ditalini or macaroni
- 10 ounce fresh or frozen sweet peas
- 1/4 cup fresh chopped dill
- 1 cup chopped green onion
- 1 cup chopped smoked almonds
- 1 lemon, zested and juiced
- 5 tablespoons olive oil
- 2 tablespoons Dijon mustard
- Salt and pepper
Instructions
- Cooking the pasta according to the instructions on the package. Two minutes before it's ready, add the peas to the boiling water. Once the peas have warmed through, drain the pasta and peas. Pour the pasta with peas into a large bowl and allow to cool to room temperature.
- Meanwhile, whisk the lemon juice, lemon zest, mustard, and oil together in a small bowl. Add 1/2 teaspoon salt and 1/4 teaspoon pepper. Pour the dressing over the pasta and mix well.
- Add the dill and green onions and toss. When ready to serve, sprinkle with smoked almonds.
