Why We Love This Protein Pudding Recipe

Cravin’ something sweet but don’t want to sweat your nutritional goals? This homemade protein yogurt recipe is so decadent and creamy that it could be considered protein pudding! Today, I’m showing you how to make vanilla protein pudding (out of yogurt), but you can make a couple of easy swaps for chocolate pudding as well. 

Here I’ve topped the protein pudding with a little bit of raspberry jam, similar to fruit topped yogurt, but don’t be deceived, the luxurious texture and flavor is more like a pudding than yogurt! Indulge away!

Note Before Getting Started: You can have high protein yogurt or high protein pudding with an average amount of carbs based on the sweetener and toppings you place over the pudding. OR you can go super low carb pudding by using low carb protein powder and low-carb sweetener like monk fruit sweetener. Therefore, the nutritional facts do vary based on what product you use.

Ingredients You Need

  • Greek yogurt – whole or low fat, unsweetened
  • Protein powder – whey protein powder or whatever variety you like, vanilla
  • Sweetener – granulated white sugar or other sweetener
  • Milk – whole or 2%
  • Vanilla extract – use high-quality as you’ll really be able to taste the extract in this no-cook protein pudding recipe

How to Make Vanilla Protein Yogurt

  1. Measure out all of the ingredients and add to a medium mixing bowl.
  2. Use a whisk or egg beater to mix the pudding ingredients together, making sure there are no clumps.
  3. Spoon the pudding into six ½ cup jars, leaving some room at the top. If adding toppings, spoon about 1 tablespoon of topping over each pudding cup.

Recipe Variations

If you’d like to make this a chocolate protein pudding recipe instead of vanilla, simply use chocolate protein powder + 3 tablespoons of unsweetened cocoa powder in place of the vanilla protein powder. You may need to add an additional tablespoon of milk for the right consistency.

To make this a low-carb protein pudding recipe, substitute granulated sugar for monk fruit or another preferred sugar substitute.

And YES, you can totally make this yogurt dairy-free! Use your favorite dairy-free greek yogurt alternative, vegan protein powder, and plant-based milk. Almond milk, soy milk, and cashew milks are great options.

Why is my protein pudding not setting?

If the pudding isn’t as thick as you want it, stir in a bit more protein powder. Refrigerate the pudding for several minutes to help it firm up a bit.

How long does protein yogurt last?

Homemade protein yogurt will keep well in the fridge for up to 7 days. Store it in an airtight container, and I recommend adding the topping shortly before serving.

Can you freeze pudding?

You could, but I wouldn’t. Freezing dairy-based foods like Greek yogurt can cause the texture to drastically change once it thaws.

Considering that they last for up to a week in the refrigerator – and taste ahhhmazing – I don’t think you’ll have a problem with “too many” leftovers!

Protein Pudding Recipe (Protein Yogurt)

Ingredients

  • 2 cups plain Greek yogurt
  • ½ cup vanilla protein powder
  • 3 tablespoons sweetener sugar or low-carb monk fruit sweetener
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • Optional topping: 6 tablespoon jam thick caramel sauce, fudge sauce

Instructions

  • Set out a mixing bowl. Measure the plain Greek yogurt, protein powder, milk, and vanilla extract into the bowl. Mix until the pudding is very smooth with no clumps. If needed, use a whisk or egg beater to remove the clumps.
  • Spoon the pudding into six ½ cup jars. If adding toppings, spoon about 1 tablespoon of topping over each pudding cup.
  • Cover the jars with lids and refrigerate until ready to serve.

Notes

To make Chocolate Protein Pudding –
2 cups plain Greek yogurt
½ cup chocolate protein powder
3 tablespoons cocoa powder
3-4 tablespoons milk
3 tablespoons sweetener (sugar or monkfruit sweetener)
1 teaspoon vanilla extract
