Open a container of cottage cheese and dump it into a fine mesh strainer. Tap the strainer over the empty container to remove as much excess liquid as possible. Then dump this drained cottage cheese into a food processor.
Add the lemon zest, garlic clove, ½ teaspoon of salt, and ¼ teaspoon of black pepper. Add 1 to 3 teaspoons of additional fresh herbs if desired.
Cover and purée until the cottage cheese is smooth. Scoop the dip into a bowl, cover, and refrigerate until ready to serve.
