Preheat the oven to 400 degrees F. Line two large baking sheets with parchment paper.
Flour a work surface and roll the pizza dough out into a large 18-inch square or circle, 1/8-inch thick. Use a pizza cutter to cut thin strips that are 2 1/2 - 3 inches long and about 1/3-inch wide. They do not have to be exact.
Spread the strips out on the baking sheets leaving just a little room in between for growth. Bake for 12-14 minutes, until light gold in color.
Meanwhile, place all remaining ingredients in a small sauce-pot. Whisk well to incorporate the cornstarch, then heat over medium. Simmer the mixture for 5 minutes, or until thick.
Once the fiddlesticks come out of the oven, pour them in a large mixing bowl. Dump the glaze over the top and toss to coat.
Serve warm with Caesar dressing for dipping!
Notes
Fiddlesticks are best straight out of the oven. If you must make them ahead, keep the glaze and sticks separate. Then reheat both before tossing together.
