Ingredients
14-16ounceskielbasa sausage links
24ouncesbaby potatoes
2bell peppersred and green, seeded and cut into 1-inch pieces
Preheat the oven to 400°F. Set out a large 13 x 18-inch rimmed baking sheet.
Cut the kielbasa sausage links into ¾ to 1 inch sections. Cut the baby potatoes and halves, then cut the peppers and onions into 1 inch pieces. Pile the kielbasa and veggies on the baking sheet and drizzle generously with olive oil. Toss well to coat, then spread the ingredients out in a single layer across the pan.
Sprinkle the minced garlic over the top of the sausage and potatoes. Then sprinkle generously with salt and pepper, and finally sprinkle with smoked paprika.
Place the baking sheet in the oven for 20 minutes. Use a large spatula to flip the sausage and potatoes over. Then continue to bake for an additional 5-10 minutes, until the potatoes are fork-tender. Serve warm!

Storing Leftovers - This sausage sheet pan dinner makes fabulous leftovers, and is great for meal prepping! Store everything together in an airtight container and refrigerate for up to 3 days.
Reheating - Reheat the potatoes and sausage in a microwave in short bursts at 50% power. Gently toss them in between bursts.
