This quick and easy grilled blackened Mahi Mahi recipe features a combo of brown sugar, dried herbs, paprika, and cayenne pepper. Start to finish dinner is ready to serve with your favorite Southern side dishes in under 20 minutes!
Preheat the grill to 400-450°F. Use a paper towel to pat the Mahi Mahi fillets to remove any excess moisture. Then brush them with olive oil on all sides.
In a small bowl, combine the smoked paprika, onion powder, salt, pepper, sugar, garlic powder, dried thyme, dried or oregano, and cayenne pepper. Mix well. Sprinkle the blackened seasoning over the Mahi fillets on all sides. Gently rub to make sure the blackened seasoning sticks to the oil.
Once the grill is hot, place the Mahi steaks on the hot grates and grill for 4-5 minutes, until the fish releases easily from the grates. If it's sticking, it's most likely not quite ready to flip.
Flip the fish and continue to grill for another 3-4 minutes, for a total of 7-9 minutes cook time. Allow the fillets to rest for 2-3 minutes before serving.
Notes
Leftover grilled fish will keep well in an airtight container in the fridge for up to 2-3 days. Enjoy leftovers cold on salads or sandwiches. Or briefly reheat the fillets on the grill or in the microwave in short 20-second bursts at 50% power.
