Scoop the avocado flesh out of the peels and throw away the pits and peels.
Place all the ingredients in a large food processor. Lock the lid into place and purée until very smooth.
Taste then season with salt and pepper as needed. Store in an airtight container until ready to use.

Notes
The sour cream and lime juice will help retain the green color of the crema. However, it's not a bad idea to press a piece of plastic wrap down over the top of the crema before covering it with a lid.It tastes freshest when enjoyed the day it is made. However, avocado cream will keep well for up to 5 days in the refrigerator, if covered well. Give it a good stir before serving.
