Instructions
Set a large 6-quart sauce pot on the stove top over medium heat. Add the brown sugar, butter, water, and salt. Stir, and bring the mixture to a boil.
Lower the heat to medium-low and allow the mixture to gently boil for 10 minutes, stirring occasionally.
Remove from heat, and allow the caramel to cool for 5 minutes.
Then whisk in the cream cheese and vanilla extract. Whisk vigorously until the mixture is thick and smooth, with no clumps.
Move the caramel dip to an airtight container and chill for at least one hour. Then slice apples and serve with a side of caramel apple dip.
Notes
Store the dip in an airtight container and keep in the fridge for up to 3-4 days.
