Set a small saucepot over high heat. Add the water and sugar to the pot. Stir and bring to a boil. Once boiling, stir, then remove from heat. Add the mint leaves and allow the simple syrup to steep and cool for 30 minutes. You can choose to leave-in or strain-out out the mint leaves. I like to keep them in because they have a softer texture than fresh mint leaves. No muddling required!
To Make a Pitcher of Mojitos:
Set out a large pitcher. Pour in the rum, mint simple syrup, and lime juice. Stir to combine.
When ready to serve, stir in the club soda and fill the pitcher with ice.
Garnish glasses with fresh mint leaves and lime rounds or wedges. Pour the mojito into glasses and serve.

Feel free to substitute white rum with vodka to make a refreshing pitcher of vodka mojitos.To make a pitcher of virgin mojitos, use sparkling soda, ginger ale, or more club soda in place of the rum.Try adding fresh sliced strawberries or coconut cream!
