Preheat the oven to 350 degrees F and line a large rimmed baking sheet with parchment paper. Pour the oats, almonds, and pepitas on the baking sheet.
Then whisk the pumpkin puree, maple syrup, vanilla, spices, and salt together. Pour over the oats and mix by hand to thoroughly coat the oats and nut mixture. Spread the mixture in a thin even layer over the baking sheet and bake for 20 minutes.
After 20 minutes flip and mix the granola, then spread back out and bake another 20 minutes. Once out of the oven, toss in the dried cranberries and cool. Store in an air-tight container for up to 3 weeks.
