Preheat the oven to 350 degrees F and line two baking sheets with parchment paper. Spread the rolls out evenly on the baking sheets.
Place the butter, pumpkin puree, sugar, cream cheese, vanilla, coffee granules, and spices in a microwave-safe bowl. Microwave for 1-2 minutes, until the butter melts, then whisk until smooth. Brush the pumpkin spice latte butter over the tops of the rolls and sprinkle each roll with pepitas.
Bake for 10 minutes, then turn the oven on broil to crisp the tops. Watch the yeast rolls carefully for 1-3 minutes, until the tops of brown and bubbly, but not burnt. Then remove from the oven and serve immediately.
