Preheat the oven to 400 degrees F. Preheat the grill to high heat. Line a large baking sheet with parchment paper.
Season the rib eye steak(s) with salt and pepper. Once the grill is hot, grill the steak(s) for 2-4 minutes per side to reach your desired level of doneness. Remove from the grill and cover loosely with foil for at least 5 minutes.
Twist the Thomas’ Mini Bagels to separate. Place the bagel halves, cut-side-up on the prepared baking sheet. Toast for 5-8 minutes.
Meanwhile, remove the basil leaves from their stems. Slice the steak into thin strips, against the grain. Slice the blue cheese into thin shards.
Once the bagels are out of the oven, top each half with 1-2 basil leaves, then 1-2 slices of steak. Drizzle with balsamic glaze and top with shards of fresh blue cheese. Serve warm.
