Southwest Brussels and Beans
Southwest Brussels and Beans - a quick and healthy 6-ingredient side dish with Brussels sprouts, French beans, taco seasoning and melted cheese.

- 1 pound Brussels sprouts, trimmed and halved
- 1/2 pound French green beans, trimmed
- 3 tablespoons olive oil
- 1 1/2 tablespoons Old El Paso Taco Seasoning
- 1 cup shredded cheese colby, cheddar, or monterey jack
- 1/2 cup chopped green onions
Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper. Then place the cut Brussels sprouts and French beans on top.
Drizzle 3 tablespoons olive oil over the top of the veggies, then sprinkle with Old El Paso Taco Seasoning. Toss to coat and spread out evenly in a single layer.
Roast in the oven for 20-25 minutes, until the Brussels sprouts are cooked but firm. Then sprinkle cheese over the top and place back in the oven for 2-3 minutes to melt the cheese. Once out of the oven, sprinkle fresh chopped green onions over the top and serve immediately.
