For the Collards:

  • 3-4 strips bacon, chopped
  • 1 medium onion, chopped
  • 2 cloves chopped garlic
  • 2 turnips, peeled and diced
  • 2 bunches collard greens (large), stems removed and cut into 1 inch ribbons
  • 2 cups chicken stock
  • 2 cups vegetable stock
  • Pinch of nutmeg
  • Salt and pepper


  • Place a large pot over medium heat. Render the bacon with the onions, garlic, and turnips until the onions are translucent, 5-8 minutes. Then add the collards and saut√© another 10 minutes.
  • Add the stock, bring to a boil. Reduce and simmer for 30 minutes. Season with nutmeg, salt and pepper to taste.
