Today’s beverage is the Watermelon Shrub Collins:

This drink is a good way to get acquainted with shrubs, or drinking vinegars.

Shrubs originated in the 17th century by using vinegar as a way to preserve fruit. They are now commonplace in bars and used as an alternative to citrus to provide acidity in a cocktail.

Watermelon Cocktail

The Watermelon Shrub Collins.
Servings: 1

Ingredients

For the Watermelon Shrub:

  • 2 cups fresh watermelon juice
  • 1/2 cup granulated sugar
  • 3/4 cup white balsamic vinegar

For each Cocktail:

  • 2 ounces gin or vodka
  • 1 ounce watermelon shrub
  • 10 mint leaves + extra for garnish
  • Soda water

Instructions

For the Watermelon Shrub:

  • Juice enough watermelon to yield two cups of juice. Add 1/2 cup of sugar and 3/4 cup of white balsamic vinegar to the watermelon juice. Shake the mixture vigorously until the sugar has dissolved.

For the Cocktail:

  • Shake all ingredients together and strain into a Collins glass. Fill with ice and top with soda water. Garnish with a mint sprig.
