Crispy Sweet Potato Crusted Salmon Sheet Pan Dinner, a fresh healthy meal with an appealing crunchy crust!
This summer is whizzing by so quickly, I can’t believe the kids start back to school in just a couple weeks. Where has the time gone?
We tend to cook less and snack more in the summer months. Yet now that back-to-school is just around the corner, I’m on the meal planning bandwagon again.
It’s a good idea for any cook to have a dozen, or more, healthy go-to recipes: dishes that are simple to prepare, with little cooking and clean-up time.
That way, you can throw in new meals you want to try here and there, but have satisfying recipes to fill in on nights you are short on time and energy.
Today’s Sweet Potato Crusted Salmon Sheet Pan Dinner is a wonderful healthy meal option that feeds up to six people. It takes very little time to make, and even less time to clean up. It’s low in carbs, and heavy on protein and veggies.
Yet best of all, it tastes delicious!
This Sweet Potato Crusted Salmon Sheet Pan Dinner is made entirely with ingredients from ALDI.
Not only do I find the best deals on groceries at ALDI, I also find higher quality products, including Fresh Never Frozen seafood, organics, and packaged foods made without dyes, preservatives, and unnecessary chemicals.
I used Fresh Never Frozen salmon fillets from ALDI as the base of the recipe. It’s a light and flavorful fish, with the freshest possible taste.
I crusted the salmon by brushing Dijon mustard over the top and pressing crushed sweet potato chips into the mustard. The Dijon seasons the salmon and acts as the “glue” that holds the crispy sweet potato chip crust to the fish.
Honest to God, SimplyNature Sweet Potato Chips from ALDI are the best sweet potato chips in the entire world!
I had a hard time not eating them all while making the crust.
The combination of the spicy Dijon and crispy sweet potato chips is a great complement to the richness of the Atlantic Salmon.
Toss fresh snap peas and broccoli in a savory-sweet glaze made of Dijon mustard, soy sauce, and honey. Arrange the veggies on a baking sheet around the salmon.
Then let the sweet potato crusted salmon and the vegetables roast together in the oven.
In just a few minutes, you’ll have tender flaky fish with a crunchy topping, and tantalizing roasted vegetables along side.
A perfect health-minded dinner for any night of the week!
When you finish off the Sweet Potato Crusted Salmon Sheet Pan Dinner, just throw away the parchment paper and wipe off the pan.
Clean up complete!
