In the heart of downtown Asheville there is a pizza joint and taproom that has been around for years. This restaurant, Barleys Taproom, is where we first experimented with dining out as a family when our kids were babies.

Why? It’s loud and bustling, with blaring live music wafting out into the streets.

To clarify, it’s a place in which no one will notice if your two year old throws a fit.

Barleys holds a special place in my heart. It gave us a toddler training ground, in which we could reinforce proper dining-in-public etiquette, without disturbing others.

Oh, and they also have great pizza and beer.

Yet best of all, Barleys has fiddlesticks.

Best Sweet and Spicy Fiddlesticks Recipe #ASpicyPerspective

Sweet and Spicy Fiddlesticks are an appetizer or party snack made of bread or pizza dough, which is cut into thin strips and baked.

The tiny breadsticks are then tossed in a spicy and sticky-sweet glaze that shimmers in the light. The glaze softens the crispy sticks a little and provides a huge burst of flavor.

Sweet and Spicy Fiddlesticks are usually served with a creamy garlic or caesar dressing for dipping, for a hot-cold sensation.

However, you can serve them as-is and they are still utterly irresistible!

Servings: 8

Ingredients

Instructions

  • Preheat the oven to 400 degrees F. Line two large baking sheets with parchment paper.
  • Flour a work surface and roll the pizza dough out into a large 18-inch square or circle, 1/8-inch thick. Use a pizza cutter to cut thin strips that are 2 1/2 - 3 inches long and about 1/3-inch wide. They do not have to be exact.
  • Spread the strips out on the baking sheets leaving just a little room in between for growth. Bake for 12-14 minutes, until light gold in color.
  • Meanwhile, place all remaining ingredients in a small sauce-pot. Whisk well to incorporate the cornstarch, then heat over medium. Simmer the mixture for 5 minutes, or until thick.
  • Once the fiddlesticks come out of the oven, pour them in a large mixing bowl. Dump the glaze over the top and toss to coat.
  • Serve warm with Caesar dressing for dipping!

Notes

Fiddlesticks are best straight out of the oven. If you must make them ahead, keep the glaze and sticks separate. Then reheat both before tossing together.
