Creamy Spinach Artichoke Pasta

After being buried in snow last week, I’m craving cozy comfort foods.

So today’s power-couple is Spinach and Artichoke Dip + Rigatoni.

AKA Spinach Artichoke Pasta!

I didn’t actually make spinach and artichoke dip and dump pasta in it… although that would be wonderful.

I made a creamy garlic and cheese sauce, based on the flavors in spinach and artichoke dip, then folded in spinach, zippy DeLallo Artichoke Bruschetta, and DeLallo Organic Whole Grain Rigatoni.

The cream sauce starts out much thinner than spinach and artichoke dip, giving it the ability to thoroughly coat the pasta, inside and out.

I chose to use DeLallo Artichoke Bruschetta, instead of plain canned artichokes, because it is rich and zesty with peppers, capers and spices.

Spinach Artichoke Pasta

Yield: 4-6 servings

Prep Time:10 minutes

Cook Time:20 minutes

Ingredients:

  • 1 Lb. DeLallo Organic Whole Grain Rigatoni
  • 1 Tb. butter
  • 1 medium onion, chopped
  •  2-3 cloves garlic, minced
  • 2 cups whole milk
  • 8 oz. cream cheese
  • 10 oz. DeLallo Artichoke Bruschetta
  • 10 oz. chopped frozen spinach, thawed,  drained, squeezed dry
  • 1/4 tsp. crushed red pepper
  • 1/2 – 1 cup reserved pasta water
  • 1/4 cup parmesan cheese

Directions:

  1. Place a large pot of salted water over high heat and bring to a boil. Cook the rigatoni according to package instructions. Drain and set aside, reserving 1 cup of salty pasta water.
  2. Meanwhile, set a large skillet over medium heat. Add the butter, onions, and garlic. Saute for 2-3 minutes, then add the milk and bring to a boil. Once the milk is scalded add the cream cheese and break it up with a wooden spoon. Whisk the cream cheese until smooth, then add the artichoke bruschetta, spinach, and crushed red pepper. Stir well.
  3. Now mix in the pasta. Add 1/2 – 1 cup salty pasta water and stir well. Simmer another 2-3 minutes while the sauce thickens, then salt and pepper to taste. Garnish with parmesan cheese.

NOTE: You could substitute canned artichokes for the bruschetta, but the artichoke bruschetta offers a lot more flavor.

    Alright…let me tell you what happened when I made this. I cook a lot, not a fan of microwaved meals. But this was something else. My fiancé grabbed my arm and said “Becky, you’ve really done it this time. Now I’m going to have to kill you so nobody else can have you”. Hahaha.
    I added two cups of mozzarella (1 cup in the sauce and 1 cup was mixed into the pasta once the sauce had been added. I also topped it with herb panko bread crumbs and served it with panko bread crumb crusted chicken (panko tofu for me since I don’t eat meat.) This is definitely a keeper!!!

    This recipe sounds so delicious that I can’t wait to try it !!! My comfort pasta dish has always been and probably always will be plain old mac and cheese, but I have found a yummy alternative in my neighborhood store’s deli. It is called Italian Mac and Cheese and I believe all the ingredients are: pasta, feta and parmesan cheeses, baby spinach and green onions. It is good cold but even better heated up !

    My Mom has made a dish for years that I have loved since childhood. My siblings and I have always called it stewed chicken with mac and red gravy. (In New Orleans, sauces are called gravy no matter what kind of sauce it is, we distinguish by color, red gravy, brown gravy, white gravy)) It’s a very basic red sauce that my mom would stew chicken in all day until it was falling apart and we put the sauce over kraft’s mac and cheese . It is to this day, my favorite comfort meal, simple, inexpensive, and feels like home!

    Pasta is my absolute favorite food – so it’s kind of difficult for me to pick my favorite comfort pasta dish! If I have to choose though, I would have to say spaghetti carbonara with peas and bacon. Creamy, rich, and savory = the best combination ever!!!

    My favorite dish that brings me comfort (and is super easy to make) is baked pasta. Just whip up some homemade marinara sauce, toss in some seared italian sausage, whole wheat penne topped with shreds of mozzarella. It’s perfect every time.

    I love pasta, especially the comfort ones, lasagna, mac not cheese. But my favorite is a one pot sausage dish with asparagus, kielbasa or chicken sausage, fettuccine, and an egg white and parm. cheese sauce. So good!     I LOVE pasta, so versatile it’s hard to choose-anything from baked ziti to linguine clam sauce. DeLallo pasta is a new favorite of mine thanks to ASP.

    I actually made spinach artichoke pasta (with DeLallo!) last night, but I added a locally made spicy Italian sausage. So delicious.

    I go back to my childhood – picked my mom’s Spaghetti Bolognese every birthday that I can remember growing up. My husband doesn’t like the recipe – not as thick and tomato-ey as he expects so I rarely make it anymore….

    This sounds wonderful! My favorite pasta dish is one I discovered less than a year ago-cacio e pepe. Easy and wonderful and always puts me in a good mood. I know what I am having for lunch today!

    I love homemade macaroni and cheese and lately have been experimenting with different types of cheese. Le Gruyere is nice as is Taleggio. I always make mine with Cavatappi noodles, I like the extra twist they have!
