If you’re always on the lookout for a quick and healthy side dish, I’ve got a good one for you today. Zesty Southwest Brussels and Beans topped with melted cheese and green onions.
I’m a big fan of roasted brussels sprouts. Yet I understand there are people out there who are not yet convinced of the glorious attributes of these little green orbs.
I believe I have found a way to pull them over to the green side, so to speak.
Mixing brussels sprouts with another green veggie, like say french beans for instance, is a great way to introduce brussels sprouts to the menu.
By mixing an old faithful vegetable like green beans, along with the brussels, provides a sense of comfort, as well as a nice textural balance.
Then here comes the best part…
Before they go in the oven, toss the brussels sprouts and french beans with a little olive oil and zippy Old El Paso Taco Seasoning, to add an unexpected zesty note to the veggies! (You can buy it in packets or in a can for easy sprinkling.)
The southwest spices in Old El Paso Taco Seasoning makes these greens hard to resist.
Yet to take this recipe one step further, I like the sprinkle the hot roasted veggies with cheese and pop them back in the oven for a few minutes.
Just look at this hot cheesy mess of greens!
I have a hard time keeping my fingers out of the baking sheet when Southwest Brussels and Beans come out of the oven.
Sprinkle fresh chopped green onions over the top, to offer a cool crunchy bite, then serve them hot.
No one can resist these brussels sprouts.

Southwest Brussels and Beans
Ingredients
- 1 pound Brussels sprouts, trimmed and halved
- 1/2 pound French green beans, trimmed
- 3 tablespoons olive oil
- 1 1/2 tablespoons Old El Paso Taco Seasoning
- 1 cup shredded cheese colby, cheddar, or monterey jack
- 1/2 cup chopped green onions
Instructions
- Preheat the oven to 400 degrees F. Line a large rimmed baking sheet with parchment paper. Then place the cut Brussels sprouts and French beans on top.
- Drizzle 3 tablespoons olive oil over the top of the veggies, then sprinkle with Old El Paso Taco Seasoning. Toss to coat and spread out evenly in a single layer.
- Roast in the oven for 20-25 minutes, until the Brussels sprouts are cooked but firm. Then sprinkle cheese over the top and place back in the oven for 2-3 minutes to melt the cheese. Once out of the oven, sprinkle fresh chopped green onions over the top and serve immediately.
