Mother’s Day
When I think of my mom, three words come to mind: Tender, Wise, and Selfless.
Over the years my mother has listened with endless patience, offered insightful counsel, held her tongue when I didn’t take her advice, and given of herself more freely than any person I’ve ever known.
She taught me the delicate balance of give-and-take in relationships. She taught me to hold my personal character with the utmost importance.
I will never forget watching her help those less fortunate, even when our family resources were low. Or watching her stand her ground to protect our family when she felt our values were under attack. She is a tribute to motherhood; I’m so very blessed to have her.
I only hope one day my children will think of me the way I revere my mother.
Mother’s Day shouldn’t be the only day we celebrate our mothers, but it is a wonderful reminder to stop and recollect the countless lessons they’ve taught us. Mom’s have a way of speaking into our lives like no ones else.

Oven Roasted Salmon
Salmon is one of my mom’s favorite foods, so this year I thought I’d make her roasted salmon with creamy horseradish and pink peppercorn sauce.
This Roasted Salmon with Pink Peppercorn Sauce is a delightful way to celebrate mom and is delightfully easy to make.
How to Bake Salmon
- Preheat the oven to 400 degrees F. Line a baking sheet rimmed baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and brush with olive oil. Salt and pepper liberally.
- Roast in the oven for approximately 12 minutes, until just barely cooked through.
Pink Peppercorn Sauce
The pink peppercorns, along with a nip of horseradish and fresh dill, provides a lovely burst of flavor over this rich, tender roasted salmon.
Place all the ingredients for the pink peppercorn topping in a blender, puree until smooth.
In 15 minutes you have a fresh and vibrant main course. Throw in a couple of mom’s favorite side dishes and you just might win the son/daughter of the year award! *wink*

Ingredients
For the Roasted Salmon:
For the Pink Peppercorn Sauce:
- 3/4 cup sour cream
- 1/4 cup milk
- 1 tablespoon fresh chopped dill
- 1 1/2 tablespoons prepared horseradish
- 2 tablespoons pink peppercorns, plus extra for sprinkling
- 1/2 teaspoon honey
- 1/2 teaspoon salt
Instructions
- Preheat the oven to 400 degrees F. Line a baking sheet rimmed baking sheet with parchment paper.
- Place the salmon fillets on the baking sheet and brush with olive oil. Salt and pepper liberally.
- Roast in the oven for approximately 12 minutes, until just barely cooked through.
- Meanwhile, place all the ingredients for the pink peppercorn topping in a blender, puree until smooth.
- Serve the roasted salmon warm, with a generous drizzle of sauce and a sprinkling of extra pink peppercorns.
