Pear and Elderflower Collins

With pears coming into season, this is a nice refreshing Collins recipe to help hold on to the warm days.

The roasted pears make for a nice richness and the St. Germain provides a fresh, floral flavor. St. Germain should be easy to find in any liquor store, but another floral liqueur could be substituted out if necessary.

Pear and Elderflower Collins

This is a nice refreshing Collins recipe. The roasted pears make for a nice richness and the St. Germain provides a fresh, floral flavor.
Servings: 1 drink


  • 1 1/2 ounces gin or vodka
  • 1/2 ounce roasted pear syrup see recipe below
  • 1/2 ounce St. Germain elderflower liqueur
  • 3/4 ounce fresh lemon juice


For the roasted pear syrup:

  • To make roasted pear syrup, slice 4 Bartlett pears and mix with one tablespoon of sugar. Put the pears on a sheet pan and roast at 350 degrees F for about 15 minutes, or until the pears start to caramelize. Blend the pears and their juices in a blender and strain out the solids.

For the Pear and Elderflower Collins:

  • Shake the gin or vodka, pear syrup, St. Germain, and lemon juice with ice and strain into a Collins glass filled with ice. Top with sparkling water.
