Throwing outdoor neighborhood shindigs is one of my favorite aspects of summer. The last couple years we’ve hosted a Caribbean-themed block party with fruity cocktails, tons of island-inspired dishes, and reggae music.

It’s our way to celebrate the end of the school year and kick off the season of sunshine.

One cocktail Lt. Dan and I are both crazy about is the Goombay Smash, originally created on Green Turtle Cay in the Bahamas.

The little tiki hut, Miss Emily’s Blue Bee Bar, has become a destination based on this simple boozy concoction.

We have personally experienced the Goombay Smash in the Bahamas, yet they are just as refreshing when mixed at home. Our goombay drink is based on the famous Miss Emily’s Goombay Smash where this drink got famous first.

Goombay Smash (Large-Batch Cocktails)

Large-Batch Goombay Punch, a festive party cocktail recipe that serves a crowd! Made with dark rum, coconut rum, pineapple juice, and lime!
Servings: 40 Servings (1.75 gallons)

Ingredients

  • 14 cups 100% pineapple juice
  • 2 bottles dark Caribbean rum (750 ml each – I used Pusser’s)
  • 1 bottle coconut rum (750 ml – Cruzan)
  • 2 cups fresh-squeezed lime juice
  • 1 1/2 cups simple syrup
  • 1 cup orange liqueur (Cointreau)
  • 1/2 teaspoon bitters, optional
  • Fresh pineapple slices for garnish

Instructions

  • If making the simple syrup from scratch, combine 1 cup granulated sugar and 1 cup water. Heat on the stovetop until the sugar dissolves. Cool completely.
  • Pour all the ingredients into a large beverage dispenser. Stir well. Add sliced pineapples, and chill until ready to serve.
  • Serve over ice.
