June Monthly Meal Plan: A monthly menu to make your summertime a little more leisurely. Four weeks of easy meals, making the most of this season’s bounty!

One of the greatest complements I ever receive is when someone tells me they love my site, because they never know what to cook and now they have an endless resource of delicious dinner ideas at their fingers tips. Upon hearing such a statement, I always puff up with giddy delight at the thought that I helped them out in some small way.

Pasta

I’ve always enjoyed lending a hand to a friend in need… and getting to have my say.

So when I started getting requests for monthly meal plans, I thought “You need someone to tell you what to cook all month?

“Oooo, Ooooo, Ooooo, Let me! LET ME!!!” (Jumping up and down, arms flailing.)

Pie

This is for you friends.

For those who would rather PIN for hours than plan a weekly menu.

For those who are splashing at the pool or chasing toddlers in the park, and don’t stop to think about dinner until 5:45pm.

For those who always work late and are too tired to make one more decision at the end of the day.

I will happily make them for you–provided you have no dietary restrictions and will try anything! *wink*

Pork Chops

I’m planning 5 days of home-cooked meals per week, and assuming you will have a leftover/takeout night, and also eat out once a week.

JUNE MENU

Week 1:

Thai Chicken Satay with Peanut Sauce, Jasmine Rice and Sauteed Snap Peas

Grilled Pork Tenderloin with Dijon and Tabouli with Feta and Endive

Prosciutto Edemame Pasta with Lemon Glaze and a Green Salad

San Franciscan Cioppino with Garlic Bread

Corned Beef Hash with Fresh Fruit and Scrambled Eggs

Leftovers

Weekly Treat: Pina Colada Cupcakes with Fresh Kiwi Frosting

Week 2:

Shrimp Tacos with Grilled Corn, Grapes, Avocado, and Creamy Ranchero Sauce

Pasta Puttanesca with New York Strips and Crispy Basil

Firecracker Pork Chops with Pineapple Kiwi Salsa and Baked Beans

Mustard Maple Chicken with Pasta with Peas, Smoked Almonds and Dill

Roasted Red Pepper Soup and Grilled Corn Salad with Smoky Vinaigrette

Weekly Treat: Fresh Strawberry Ginger Pie

Week 3:

BBQ Carnita Tacos with Chips and Salsa

Roasted Indian Fish and Creamy Curried Cauliflower

Pappardelle Alle Vongole (Pasta with Clams)

Pollo Rojo (Red Pepper Chicken) with Black Beans and Rice

Asian Beef and Bok Choy Salad

Weekly Treat: Blackberry Bread Pudding

Week 4:

Stuffed Poblano Peppers with Red Pepper Puree and Coconut Rice

Indian Spice Rubbed Chicken and Grilled Corn with Smoky Lime Mayo

Fried Calamari Salad with Caperberries Salad and Lemon Aioli

Thai Chicken Fried Rice

Andouille Blue Cheese Sliders with Red Slaw and Beans

    Nice meal plan. I can’t plan more than a few days in advance, due to failing to follow my plans and veggies spoiling as a result. That and I have no idea what I’ll feel like eating in three weeks. I’ll definitely use some of these recipes, but we do have a few restrictions in my house so I can’t use them all.

    I looove this idea! I do meal plan, but I can always use new inspiration, and I’m so with you on loving hearing when people make my recipes for their family meals. The picture of you flailing your arms offering to make meal plans totally made me smile, thank you :)

    Love having you do the thinking for me Sommer! Isn’t that the hardest part? I find especially during the school year it’s so easy to get into a 4 meal rotation rut. I particularly liked the teeny macaroni in the edamame salad (have not had that we sort since becoming gluten free).

    What a great selection of menus. I hope I can manage to create at least half of them. My husband would be in ‘heaven’ if I prepared these goodies for him every night. He will be delighted, however, if I even serve him half of them. Wish me luck.

    Wow, what yummy dishes and a great reason to look forward to everyday! Personally I can do weekly planning, but not monthly. I never know what I’ll get from the CSA or what cravings I get or tasty recipe I see. See, I saw quite a few recipes you have posted for your monthly menu and I want to make almost all of them! They just looks so good. Better yet instead of me planning my recipes for the month, I’ll just pop over to your house everyday for dinner! :)
