This simple recipe makes utterly fabulous fluffy, crispy waffles with a delicate sweet-butter flavor. It’s what I use every time I need a reliable and easy waffle recipe to quickly feed the family or a small gathering.

The waffles are made crispy by adding cornstarch to the batter, then keeping them in the oven (to dry and warm) until ready to serve.

Steam from the waffle maker is the culprit of having soft or soggy waffles, but adding the cornstarch and drying in the oven make a huge difference. Don’t skip these two steps!

Start to finish, a full batch of the fluffiest, crispiest, most tender waffles only requires about 30 minutes to make, and can easily be frozen for your breakfast meal plan.

What Ingredients You Need for the Easiest Homemade Waffles

There is no need for packaged mix when it is this easy to make fluffy and crispy waffles entirely from scratch. Try our homemade waffles recipe and I promise that you will never buy the boxed stuff again!

Here’s what you need:

  • All-purpose flour The main ingredient to make the batter
  • Cornstarch – Our secret ingredient for the crispiest waffles
  • Granulated sugar Adds a much needed touch of sweetness
  • Baking powder – One of the rising agents to make fluffy waffles
  • Salt – Helps to balance the sweetness
  • Milk – To create a smooth batter with rich flavor
  • Eggs Another lifting ingredient used to bind the batter
  • Melted butter – For rich luxurious flavor
  • Vanilla extract – Added for flavor

How to Make Fluffy and Crispy Waffles

  1. First, preheat a waffle maker to high heat. Set the oven on 200 degrees F. Set a baking sheet with a rack on it in the oven to hold and warm the waffles. The rack will make sure the waffles don’t get soggy!
  2. Meanwhile, in a large mixing bowl, combine the flour, cornstarch, sugar, baking powder, and salt. Whisk well.
  3. Then mix in the milk, eggs, melted butter, and vanilla. Stir until the mixture is very smooth.
  4. Once the waffle maker is very hot, add approximately ½ cup batter (for a large Belgium-style waffle), making sure the batter is evenly distributed. Cook for 3 ½ minutes undisturbed. Check your waffle just as the timer goes off, and remove the waffle when the exterior is golden-brown. 
  5. Move the waffle to the warm oven and repeat with the remaining batter. PRO TIP: The warm oven helps remove steam from the waffles, making them extra crispy. Don’t skip!
  6. Once all the waffles are cooked, let them rest in the oven for another 5 minutes to continue to dry and crisp.
  7. Serve warm with your favorite toppings.

  • Don’t over mix the waffle batter! You want the batter to be smooth, but definitely not over mixed. This can result in tough or rubbery waffles!
  • Be sure to preheat the waffle maker and lightly coat with vegetable oil to prevent sticking!
  • The waffle batter will expand as it cooks, so fill the waffle maker until almost the whole bottom is filled but not all the way!
  • To clean the waffle maker, let it cool completely and then wipe down with a damp sponge or cloth and then dry! Avoid using anything that isn’t rubber to scrape any pieces that are stuck, since it might ruin the nonstick coating.

What is the difference between a waffle and a Belgian waffle?

The main difference between regular waffles and Belgian waffles is the size of the pockets. Belgian waffles have extra deep pockets for more filling to go into them! This will depend on the kind of waffle maker you have.

How long do these waffles stay fresh?

Leftover waffles can be kept in an airtight container in the fridge for a day or two, and keep well in the freezer for up to 3 months. Reheat in a toaster or the oven for maximum crispiness!

Can This Homemade Waffles Recipe Be Made Gluten-Free?

Absolutely! Simply swap all-purpose flour with your favorite gluten-free baking substitute. But keep the cornstarch, it’s already GF-friendly!

  10. These are delicious! I have been struggling to find a non Belgian waffle so I don’t have to wait 8 hours to make. I halfed the cornstarch and added some cinnamon. My super picky husband loved them even plain. They also reheat perfectly in the toaster!

    • Actually, after making this several more times, the batter is nice and creamy. I just had my measurements off a little I guess. Either way, this is delicious.

  23. Great recipe. I did make a few changes. I subbed almond milk for regular milk and added one teaspoon of apple cider vinegar and let it sit for 5 minutes. I used half all purpose flour and half spelt flour. I omitted the corn starch and instead used more flour. I decreased sugar to 2 tbs and only used 1/4 cup of vegan butter. I whipped up egg whites and folded it to the mixture in the end. Amazing crispy waffles. My kids loved them.

  24. Great flavor, but were so “crispy” we needed to use a knife to saw into bite size pieces.  It was more like eating a crispy taco shell than a waffle.  Will try again and decrease the amount of corn starch to see if we can keep the crispness but make them more tender.

  25. Finally a crispy outer and tender inside waffle.

    I did make a couple changes. Since I had buttermilk souring in the refrigerator, I replace the milk with about 1.25 cup buttermilk, and about .75 cup 2%. That meant reducing the baking powder to 1 Tlsp and adding 1 tsp baking soda. There was no need to crisp them in the oven since there are only two of us and they came out of the double Waring waffle maker already crisp.
    Thanks for the recipe. I would never have thought to add cornstarch.

  27. Great recipe. I did end up adding 1 tsp cinnamon, and 1/2 tsp ground clove to switch it up a bit, and it added a deep nutty flavor !
