It’s easy to get into a snacking rut, and buy the same boring items again and again. However, have you noticed when you let this happen, it magically takes forever to decide what you want to eat?

I’ve started making a point to buy snack ingredients at the market that signify fall. Fresh seasonal foods that I know I’ll get excited about when I open the fridge.
Pomegranates, honey crisp apples, beets, cranberries, pickled veggies, and of course figs. These are all foods that amp up flavor and appeal to this time of year.
With this revitalized mindset of reinventing snacking, I’ve discovered I focus more on the experience of the snack, rather than just filling my belly.
Flavor and textural combinations are a high priority, while keeping the snack simple enough to assemble in minutes. When I do this, I enjoy my snack so much more, and tend not to overeat.
Today’s Caramelized Figs with Cheese and Gingersnaps recipe is a perfect example of a reinvented fall-inspired snack.
I’ve taken plain old cheese and crackers to the next level by quickly caramelizing fresh figs in a skillet, then setting them on top of gingersnaps slathered with creamy dreamy The Laughing Cow® Cheese.
The crunch and spice of the gingersnaps brings out all the best qualities of the warm caramelized figs. Then Laughing Cow® Cheese Wedges offer a smooth, spreadable, salty note that perfectly complements the sweeter elements.
Now this is a snack I can get excited about!
In fact, I’ve discovered all sorts of reinvented snack options this month using The Laughing Cow® Cheese to punch things up.
Two other current favorites are grilled apple slices slathered in The Laughing Cow® White Cheddar Flavor Cheese, and mini bagels topped with The Laughing Cow® Spicy Pepper Jack Cheese and sun dried peppers.

Caramelized Figs with Cheese and Gingersnaps
Yield: 12 pieces (4 servings)
Prep Time:5 minutes
Cook Time:2 minutes
- 3 fresh figs
- 1 tablespoon olive oil
- 4 wedges The Laughing Cow® Creamy Light Swiss Cheese
- 12 gingersnaps
- Cut each fig into 4 wedges. Place a skillet over medium-high heat and add the oil. Once hot, carefully place each fig in the skillet, with one cut-side down. Sear for 1-2 minutes, then toss and pour out onto a plate. Sprinkle with salt if desired.
- Open The Laughing Cow Cheese Wedges and spread about a third of each wedge on each gingersnap.
- Top each gingersnap with a caramelized fig and serve!
