Brownie Bites with Oreo Frosting
I’ve got a special treat for you today, Brownie Bites with Oreo Frosting. Crispy bite-size brownies with a soft chewy interior, topped with decadent cookies and cream frosting.
Marketers always know how to get me.
Until I made this recipe, I hadn’t bought a package of Oreo cookies in years. Literally years.
Usually I can walk down the cookie and snack aisle at the grocery store, bypassing the junky snacks (on toward the less junky snacks) very easily. I always tell myself that if I want sweets I’m better off making them myself.
A good deterrent, yet not restrictive.
However, the other day I was meandering through the aisles with my coffee in hand (which I cannot resist at the grocery store) and happened to look up in the cookie section.
There they were… Mini Oreo Cookies. I was doomed.
I’m the kind of girl who cannot resist baby animals or cute food. If I see a miniature bite of anything a sing-songy, “Awwwwwwe!!!!” always escapes my lips.
It’s a personal problem. I’m currently in therapy trying to fix it. *wink*
Anyway, I blinked and the Mini Oreos were in my grocery cart. I justified this slip by telling myself I would make something with them. Something just as itty bitty and awe-worthy.
So today I’m sharing my personal guilty pleasure treat, Brownie Bites with Oreo Frosting.
This simple brownie bites recipe is the perfect platform for Oreo frosting. They are rich, chocolatey, crispy on the outside, chewy in the center, and terribly cute.
Adorable, even.
Brownie Bites with Oreo Frosting are a great way to have your daily treat without going overboard. That is, as long as you only pick up one or two, then run away from the platter holding the rest of them.
My Brownie Bites recipe is a great “base recipe” for all sorts of brownie bite treats. After you try them with the Oreo Frosting, consider add-ins likes mini Reeses cups or cherries.
But you have to, have to, have to make the Oreo Frosting first. It is divine.
I finely crushed the Oreos so they would be small enough to fit through a large piping tip, then mixed them into a creamy frosting base for a cookies and cream frosting flavor.
Then I piped the frosting on top of the brownie bites and garnished them with a Mini Oreo Cookie.
Touché Oreo. Touché.
Brownie Bites with Oreo Frosting are fabulous for fall parties and lunch box treats. They are reminiscent of childhood, yet rich enough to satisfy a distinguished palate.
…Plus they are so darn cute, who could resist?
Brownie Bites with Oreo Frosting
Ingredients
For the Brownie Bites:
- 1 cup unsalted butter melted
- 1 1/2 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1 teaspoons instant coffee granules
- 1 teaspoon salt
- 4 large eggs
- 1 tablespoon vanilla
- 1 cup mini chocolate chips optional
For the Oreo Frosting:
- 1 cup unsalted butter softened
- 5 tablespoons heavy cream
- 1 teaspoon vanilla extract
- 2 pinches salt
- 6 cups powdered sugar more as needed
- 1/2 cup ground Oreo crumbs from 1 box Mini Oreos
Instructions
For the Brownie Bites:
- Preheat the oven to 375 degrees F. Spray mini muffin pans with nonstick baking spray and set aside.
- Mix the sugar, flour, cocoa powder, coffee granules and salt in a large bowl. Whisk in the eggs and vanilla, then slowly whisk in the melted butter.
- Use a small 2-teaspoon scoop to evenly ladle the batter into the muffin tins. Bake for 13-18 minutes. Test by inserting a toothpick into the center of one brownie bite. If it comes out clean, remove from the oven. Cool in the pans for 5 minutes. Then invert the pans and tap gently to release the brownie bites.
For the Oreo Frosting:
- Place the softened butter in the bowl of an electric mixer. Beat on high until fluffy, then reduce the speed and beat in the heavy cream, vanilla, and salt. Scrape the bowl. Then slowly beat in the powdered sugar.
- Crush the Oreos (I used 1/2 cup of mini oreos) in a food processor, with a rolling pin, or by hand, to a fine crumb. The crumbs need to be fine to go through a piping bag. Then slowly beat the Oreo crumbs into the frosting.
- Scoop the Oreo frosting into a large piping bag with a large piping tip. Pipe a dollop of Oreo frosting on the tops of the brownie bites and garnish with a Mini Oreo Cookie if desired.
These were the best Bwownie bites I have ever had in my entire life!!!!!

i made these and they were wonderful! One lady at my get together said they were a “little bite of heaven”. Just wanted to point out that in the recipe it states all the ingredient to add but never mentions the sugar. I get out my ingredients from the list so if not I might have been confused by just reading the detailed step by step instructions. Just FYI
