Why We Love This Kentucky Derby Pie Recipe

If there was ever a pie, I would urge you to make this holiday season; it’s this one… Bourbon Derby Pie with Salted Caramel Whipped Cream.

It includes Kentucky bourbon whiskey, pecans, dark chocolate, buttery crust, gooey filling, and salted caramel cream, all stacked together in layers of heavenly bliss.

Is there really any other pie that could possibly compare?

Last holiday season I made it my goal to create perfect pumpkin and cinnamon pie recipes.

However, this year I have been completely obsessed with Derby Pie.

What Makes This A Derby Pie?

A classic derby pie recipe is essentially a nut pie with chocolate chips in the mix. Usually, the filling is made with either pecans or walnuts. Once baked, it sets in a gooey layer.

The chocolate chips sink to the bottom creating a molten chocolate layer that oozes out from under the nuts. This is sweet southern perfection.

However in today’s version, Kentucky Derby Pie with Salted Caramel Whipped Cream, the pecan filling has a boozy whiskey essence, which is complemented by dark chocolate and salted caramel cream.

The beauty of our Derby Pie is that the filling takes just moments to mix. Dump the ingredients and stir. Then pour the filling into a pie crust and place it in the oven.

It really is as easy as… Well, you know.

The only thing that could possibly make this pie even better is to bake it in, and serve it on, stunning porcelain-enameled serving pieces.

Kentucky Derby Pie Ingredients

For the Bourbon Derby Pie:

  • Homemade Pie Crust or Refrigerated Roll-Out Dough
  • Packed Brown Sugar
  • Flour (you can use all-purpose flour)
  • Large Eggs
  • Stick Butter
  • Bourbon Whiskey
  • Vanilla Extract
  • Salt
  • Dark Chocolate Chips
  • Roughly Chopped Pecans or Walnuts

For the Salted Caramel Whipped Cream:

  • Heavy Cream
  • Salted Caramel Sauce (and some extra for the top)

How To Make Derby Pie

  1. Make The Pie Crust â€“ Start by preheating the oven to 350 degrees F. Roll out the dough into a circle, three inches wider than your pie plate. After you roll out the crust, carefully move the dough to the pan and fit it into the bottom of the pan. Crimp the edge and place the pie crust in the fridge.
  2. Make the Filling â€“ Whisk together the brown sugar, flour, eggs, butter, bourbon, vanilla, and salt in a large bowl. Then once the mixture is well combined, stir in the chocolate chips and chopped pecans.
  3. Fill the Pie â€“ Once the crust is very cold, pour in the filling and make sure that it is evenly spread in the crust.
  4. Bake the Pie â€“ Place the pie on the lowest rack in the oven and bake until the center of the pie is firm and the top is golden, which can take about 45 minutes. Once you take the pie out of the oven, put it to the side to cool completely.
  5. Make the Whipped Cream â€“ When you are ready to serve this pie, whip the heavy cream in a stand mixer or electric mixer until it forms stiff peaks. Then whip in some caramel sauce very lightly so you don’t lose all the air in the whipped cream. Scoop the whipped cream on top of the pie and spread until it is smooth. Finish off the pie by drizzling some salted caramel sauce over the top before cutting to serve.

NOTE: The Bourbon Derby Pie can sit out at room temperature for up to four days, without the whipped cream topping. Keep it well-covered. The texture is best warm or at room temperature. Only add the whipped cream on the day you plan to serve the pie. If serving the pie hot, add a dollop of whipped cream to each plate instead of spreading it over the top of the pie.

Yes, you can make the pie portion the day before you want to serve it (even 2-3 days before you want to serve it!) Yet I would advise you to not add the whipped cream until you are ready to serve this pie.

Yes, wrap it well and it can freeze up to 6 months. Then thaw in the refrigerator for 24 hours before serving.

For the Bourbon Derby Pie:

  • 1 1/2 cups heavy cream
  • 3 tablespoons salted caramel sauce + extra for top

Instructions

  • Preheat the oven to 350 degrees F. Roll the pie crust into a circle, 3 inches wider than your pan pie, usually 12 inches to fit a 9 inch pan. Carefully move the pie crust to the pan and fit it down into the bottom. Crimp the edges. Refrigerate the crust while making the filling.
  • In a large bowl, whisk the brown sugar, flour, eggs, butter, bourbon, vanilla, and salt. Stir in the chocolate chips and chopped pecans.
  • Once the pie crust is very cold, pour the filling into the crust and set in the oven on the lowest rack. Bake until the center is firm, and the top is golden, about 45 minutes. Cool completely before moving on.
  • When ready to serve the pie, whip the heavy cream on high until firm peaks form. Whip in the caramel sauce. Scoop the whipped cream onto the top of the pie and smooth out neatly. Drizzle the top of the pie with extra salted caramel sauce. Cut and serve.
