In my opinion, they shouldn’t!
Today I’m sharing a festive Independence Day treat for adults, Boozy Red White & Blueberry Rocket Pops. Our cocktail popsicles are made with three fruity layers, all blended with pineapple vodka to add a little punch.
The red layer is made with strawberries, sugar and vodka. The white layer is made with coconut milk, sugar, and vodka. And the blue layer is made with blueberries, sugar, Â and you guessed it… More vodka.
Pineapple vodka not only turns classic popsicles into cocktail pops, it enhances the natural strawberry, coconut and blueberry flavors.
Each layer in the Boozy Red White & Blueberry Rocket Pops is added to popsicle molds and frozen individually so the layers don’t bleed together.
Insert the popsicle sticks into the final layer.

More Homemade Popsicles
Boozy Red White & Blueberry Rocket Pops
Ingredients
For the Red Layer:
- 1 cup whole frozen strawberries
- 1/4 cup granulated sugar
- 1/4 cup water
- 1 1/2 tablespoons pineapple vodka
For the White Layer:
- 1/2 cup canned coconut milk, thick and unsweetened
- 3 tablespoons granulated sugar
- 1 tablespoon pineapple vodka
For the Blue Layer:
- 3/4 cup frozen blueberries
- 3 tablespoons granulated sugar
- 2 tablespoons water
- 1 1/2 tablespoons pineapple vodka
Instructions
For the Red Layer:
- Place the ingredients in the blender and puree for 2 minutes to allow the sugar to dissolve. Pour the mixture evenly into 6-8 rocket shape popsicle molds. Freeze for one hour.
For the White Layer:
- Once the red layer is set, place the ingredients for the white layer in a clean blender jar. Puree for two minutes to dissolve the sugar. Pour the white layer over the red layer in the molds. Freeze for 45 minutes.
For the Blue Layer:
- Pour the ingredients into a clean blender jar and puree for 2 minutes to dissolve the sugar. Pour evenly into the popsicle molds. Add popsicle sticks and freeze until solid. At least 3 hours.
- When ready to serve, run the tip of the molds under warm tap water for 30-60 seconds. Then gently pull the popsicles out of the molds.
